Hospital Has New Kitchen

COURT HOUSE - Frank Green, head of the Burdette Tomlin Memorial Hospital Services Dept, has announced the completion of the new kitchen and cafeteria complex as part of the Phase III renovations that are nearing completion. After eight months in temporary facilities the dietary staff at Burdette Tomlin Memorial Hospital was happy to be in the new kitchen, provided with all new or rebuilt equipment. Included are a new automated tray assembly conveyor and mobile tray assembly make-up providing 30 feet of tray •assembly as compared with six feet in the old kitchen. There are also a new braising kettle, conventional oven, hot top and hot plate range for cooking. NEW AND GREATER storage areas are available with [a^ walk-in freezer and two refrigerators providing 3,700 cubic feet of cold storage, almost five times that in the past • The~dry food and paper storage room was increased and divided into separate areas for food and paper. The expansion — a prerequisite to additional hospital beds — has provided office space for Food Service Administratiqn, # and separate areas for' preparation of cold fodtf away from the heat of stoves. THE NEW KITCHEN has an expanded dishwashing area and two

new food waste disposal systems along with a new dry chemical fire extinguishing system: Also provided for in the Phase III expansion is a new cafeteria, open daily, with seating for 120 persons. The bright, cheerful area has six steam table wells for hot food service and two cold pans.for mqj-. chandising and displaying of cold products.
