A ride through South Jersey in late February and early March reveals farmers on tractors tilling their fields and property owners roto tilling or spading a plot to raise fresh vegetables for their families. In April southern h|pw Jersey is beautiful with the fruit orchard! in bloom. ^ One of the fijgt fresh vegetables to appear in local markets is asparagus which is plentiful and at its prime, in the month of May. Asparagus contains Vitamin A and C and has a low caloric content for the weight-watcher. ’Ffhe ways asparagus may be used in the menu is endless. It is used as a sandwich, salad, soup, quiche, casserole, and as a
vegetable served with butter or sauce. To insure its vitamin content and appearance, asparagus should be pt-epared for cooking by breaking off the white ends, carefully washed and arranged in tied bundles with stalks standing in a small deep pan containing at least two inches of boiling water — pan loosely covered. Those with asparagus in their own gardens know the delicate taste of asparagus — when the water is put on to boil, the asparagus cut fresh, washed and cooked in a matter of minutes. If the supply of asparagus is greater than you can use at the time, freezing the spears may be your answer. Prepare the asparagus for cooking, blanch for two minutes, chill thoroughly, and place in air-tiuht baes. The
