Heat through and serve. • • • My great aunt used to make clam fritters for me when I visited her in Avalon. Following is her recipe. CLAM FRITTERS 1 pint of shelled clams 2 eggs 1/3 cup milk 1-1} cups flour 2 teaspoons baking powder salt and pepper Drain clams from liquid and chop. as Beat eggs until light, add milk, flour, baking powder, and chopped clams. Season with salt and pepper. Heat deep kettle of fat 375 degrees. Dip a spoon into the fat, then take a spoonful of the fritter mixture, and carefully drop into the fat. Fritters should be cooked thoroughly and browned in 3-5 minutes. Remove and drain on paper. Serves 6. • • * CLAM PIE Make pastry for two pies from your favorite recipe. Line the bottom of the pie plate with bottom curst. Dice 3 medium potatoes and 1 good sized onion, cook for about 7 minutes. Drain. Chop 3 doz. large clams. Save juice, heat clams and juice. Add potatoes and onions and br-, ing to a boil. Thicken with 2 tablespoons flour. Add 6 tablespoons butter or oleo to the clam mixture. Pour the clam mixture into the pie shell. Cover with top crust. Bake 1 hour at 350 degrees. Serves 6.
CLAM CHOWDER IS one of the most common ways clams are eaten. Clam Chowder is made differently depending on whether you like it made with milk, referred to as New Ewland Clam Chowder or made With a tomato base and called Manhatten Clam Chowder. Everyone has their own preference and favorite recipe. The quantity of clams to buy depends to a great extent on how the clams are to be served. To serve six people, a safe rule is to buy three dozen shell clams, or a quart of shucked clams, or 2 (7 oz.) cans. Clams freeze well out of the shell. Try putting some in your freezer for use when clams are not as plentiful. Anyway vou eat them, clams are good for you nutritionally—and great if you are on a diet.
