2 pounds green apples Pastry for 1 crust pig l Cup sugar y t teaspoon nutmeg 1/8 teaspoon salt 1 teaspoon lemon peel y i teaspoon cinnamon 2 Tablespoon butler or margarine Pare and core apples; Slice about Vs inch thick. Line 9 inch pie pan with pastry. Combine sugar, nutmeg, salt, lemon peel, and cinnamon. Place one half of apple slices in pan, sprinkle with one half of the sugar mixture; repeat'heaping apples in center. . Dot with butter andmargarine; Cut slits in top crust; place over apples; trim edges; flute or seal with fork. Bake in hot oven (425*F.) 40 minutes or until apples are tender. Peel core and slice apples. Sift dry ingredients together. Blend buttei* into flour mixture until it resembles coarse corn meal. v Mix egg, milk and vanilla together and combine with dry mixture. Spread in a well greased shallow, l‘/2 quart baking dish. Press apple slices into the
dough.
For topping, dot top with butter and sprinkle with sugar and cin-
namon

STARR APPLE FRITTERS 5-6 large green apples 12 Cups flour 3/4 teaspoon salt 2 eggs (well beaten j 2 teaspoon baking powder 1 Cup milk Sift dry ingredients together. Combine with milk and eggs. Pare, core and cut apples into eighths, then thin slices and add to the batter. Mix well. Fry slowly in 'U inch of vegetable shortening in your frying pan on both sides until brown and apples are tender. Serves 4-0.
