30. . A division of Atlantic Community College, the academy will be one of the first comprehensive culinary training programs affiliated with a communi ty college. The two-year . program will lead to an Associate of applied Science degree in Culinafy Arts with a culinary diploma. MORNING AND evening classes will be scheduled so students can work at jobs related to their professions and earn funds for tuition. Classes will be broken into units of 20 students to allow individual handston instruction. The curriculum«(J11 in-

clude all phases of hot food preparation. garde manager, purchasing, storeroom, baking, pastry institutional foodservice, dining room operations, saqitation, stpwarding, ^ menu and facilities design, wines and mixoldfey, supervision and management, international foods, classical cuisine, banquet and gourmet dining room operations Field trips to winefies, casino operations, meat plants, markets, etc. will be part of the course of study. quired to serve their 15-17 weeks externship at an ACA approved establishment. They will be closely monitored and supervised throughout this term by ACA Extern and Placement Officers. Atlantic City’s casinos, hotels, and restaurants, as well as establishments in New York. Pennsylvania and North Jersey, have made arrangements for incorporation of the extents. ( The Academy of * Culinary Arts will also provide continuing education courses for bakers, pastry chefs, executive chefs and other food and beverage personnel.
