Don’t Overlook this Natural Sweet

by Florence Heal 1 look forward to the Jersey sweet potato in the farm markets and stores. I come from a sweet potato loving bunch. Each year my father would order baskets of sweet potatoes for our family. It is tricky to store sweet potatoes in today's modem home where we don’t have uninsulated heaters in our cellars. Sweet potatos should be stored in a well ventilated place with a temperature around 60 degrees F. The two general types of sweet potatoes in the market are regular and yarns, the regular sweet potato is firm, dry. somewhat mealy flesh that is light yellow or pale orange The yam has soft, moist flesh that is deep orange color. ■ . THE TYPE YOU CHOOSE is really a matter of persoiwil choice. Just remember that plump, medium sized sweet potatos that taper toward the ends are preferable!. JERSEY SWEET POTATO BAKE 1 Cup boiled and mashed sweet potatoes * 1/3 cups butter or oleo, melted •I egg. beaten iy 4 cupe sifted flour 2 teaspoons baking powder 1/2 teaspoon salt Combine potatoes, butter or oleo, and egg. ■ Mix thoroughly and combine flour, baking powder, and salt Blend thoroughly. Drop on greased baking sheet Bake at$75 degrees for lb-12 minutes. SWEET POTATO CROQUETTES 2 Cups cooked and mashed sweet potatoes 1/4 cup minced celery ' 1/2 teaspoon salt 1 teaspoon milk 2 tablespoons butter, melted 2/4 cup crushed cornflakes Combine sweet potatoes, celery, and salt; mix well, and stir in milk. Shape into balls; dip in melted butter and roll in cord flakes. , Place croquettes on a broiler pan. Broil 6-7 inches away from heat for 5 minutes, turning until golden brown on all sides. * V SWEET POTATO SOUFFLE 2 pounds sweet potatoes, cooked 1/2 cup sugar 1 egg, beaten 1 teaspoon cinnamon , « ’ 1/2 teaspoon nutmeg 2 tablespoons butter 1/2 to 1 cup milk marshmallows Heat 1/2 cup milk and butter together. Mash potatoes and add sugaf and milk alternately. Beat until smooth. Add spices and egg, add more milk to the desired consistency. Place mixture in a buttered casserole and bake In 450 degree oven for 20 minutes or until brown. Remove from oven. Place marshmallows on top. Place under broiler to brown marshmallows. Serve immediately.

BAKED SWEEP POTATOES WITH APPLES 2 pounds peeled, cooked sweet potatoes 1 Cup brown sugar packed 2 cups thinly sliced pared cooking apples 1/4 cup butter or oleo, melted 1 teaspoon grated ordnge rind 1/4 cup chopped walnuff Cut sweet potatoes into thick slices; arrange layer of sweet potatoes in greased baking dish. - Cover with a layer of apples; sprinkle with brown sugar. Repeat layers. Combine butter and orange rind. Pour over the layers and bake uncovered 45 minutes, basting once or twice with liquid in bottom of dish. Top with nuts last 5 minutes of baking time. Makes 8 servings. SWEET POTATOES rN ORANGE CUPS 3 oranges, halved 2 i/2 cups mashed sweet potatoes 1/2 cup cream 1/2 teaspoon salt 1 Tablespoon brown sugar 6 marshmallows Remove orsnge pulp; discard white membrane. Cut pulp into small pieces. Beat sweet potatoes with cream, salt, brown sugar; add orange pulp. Fill orange cups with potato mixture; top with marshmallows. Bake at 350 degrees for 20 minutes. Yield: 6 servings. • , GRA TED SWEET POTATO PUDDING 3 Cups grated sweet potatoes 1/2 cup sugar 1 !2 cup maple syrup I cup milk 1 teaspoon nutmeg 2-4 tablespoons butter, melted 1/2 cup chopped nuts 1/2 teaspoon salt 2 eggs, well beaten ComjW sweet potatoes, sugar, syrup. m(Bi. nulmeg, butter, salt and nuts. Add eggs; pour Into a buttered 9x9 Inch pan. Bake at 375 degrees for 50-60 minutes or until firm. Serve with whipped cream. Serves 6. Florence L.D.
