V.Mix sugar and starch in saucepan. Gradually stir in water and juice. Boil for 1
minute, stirring constantly.
Stir in flavoring and food coloring. Serve
hot.
PARTY CHEESECAKES 24 vanilla wafers 2 (8 oz.) packages cream cheese cup sugar • 2 eggs I Tablespoon lemon jutce 1 teaspoon vanilla extract I (22 oz.) can pie filling whipped cream (optional)
PJare paper liners in 24 muffin tins pul one vSniila wafer in boilom of each. Combine cream cheese, sugar, eggs lemon juice, and vanilla beal until smooth and creamy. Pour enough filling into muffin cups to fill each about two-thirds full. Bake at .250 degrees for 15-20 minutes Cool thoroughly or refrigerate over night Just before serving, spoon cherry pie filling on top of each cheesecake If desired, top with whipped cream. Yield 2

% cup frozen orange Juice concentrate
thawed
2 eggs, beaten A

2 (17 oz.) jars light or dark sweet cherries
drained and pitted
1 (II oz:) can mandarin oranges, drdined 2 cups marshmallows (cut in small pieces
or use nhinatures) 2 cups green grapes
Combine orange juice, eggs, and sugar
in a small saucepan. Cook over low heat stirring constantly, until thickened Cool. Fold whipped cream into orange juice mixture. For several years now I’ve maintained a “wish list” of natural phenomena I’d like to
see. High on th list is the desire to see a whale
“breach.” Also on the list was a chance to observe chimney swifts descending en masse into a chimney for the night. Well, the other day I got one of my wishes right here in Cape May Court House. It was the swifts — not the whale.
Since I’ve lived in Cape
May, I have frequently seen
chimney swifts at dusk in
flight over my house. Little
dark gray birds, they look like w. stubby cigars with wings fly- i— 1 T - 1 —j—, --,—. ing in eircles and chattering ^—‘'7'” madly as they catch insects. " rhs* These curious little birds are especially designed for nesting on vertical surfaces, formerly in caves and hollow trees but
since the arrival of man in air shafts, barns, attics, ofd wells and, of course, chimneys. Their feet are designed for gripping vertical surfaces and their stiff tails have bristles which they use as props. Their nests are half-round saucerlike platforms of
twigs attached to the chimney wall by the birds’ glutinous
saliva.
Swifts nest in groups. As darkness approaches they circle around and around their home chimney then, in an instant, fun-
nel down and are gone from view.
