fby Florence Ileal June is Dairy Month, and it would take more than 30 days to imagine a more versatile food than this natural product whose form may be liquid, solid, or in between. Cottage cheese is typical of the latter. It’s also the mainstay of many a dieter because of its nutritive value. There are more ways to enjoy cottage cheese than spooning it onto your plate, stdpight from the container. In fact, with but a few Clips, you can serve cottage cheese under several disguises — before, during and after the entree. DIP FOR VEGETABLES I Cup cotiaRe cheese 1 Cup mayonnaise 1-/2 Cup sour cream 2 Tablespoon chopped onion 1 Clove garlic 2 Tablespoons chopped chives I Tablespoon parsley 1/2 Teasooon Worcestershire Combwe cottage cheese and sour cream in blende|until smooth: Add remaining ingredients and serve • • • DON'T PUT THE blender away yet! Even without other ingredients, cottage ‘ cheese can be given a different, smoother consistency via the blender. It’s delicious this way poured over broccoli, cauliflower or green beans: • • • Cottage Cheese is used in many salad molds. One of my favorites is Chili Cheese Mols. CHILI CHEESE MOLD 1 Teaspoon plain gelatin 3/4 Cup chili sauce 2 Cups Cottage CheeSe

1/2 Cup chopped green pepper 1/2 Cup heavy cream I pound cooked shrimp marinated in French dressing 1/4 Cup cold water I Cup sour cream I Cup chopped celery 1/4 Teaspoon salt Deviled eggs Let gelatin stand in cold water for 5 minutes in a small saucepan. Add chili sauce, stir over heat until gelatin is dissolved. Let cool. WKh an electric mixer beattottage cheese until smooth. Fold in sour cream, celery, green pepper, salt. Fold in whipped cream.
