Dressing tour Salads' Cheaply
By Florence Ileal There is an old saying (hat a salad dressing can make or spoil a salad. I am sure, (hat at times you have had a salad which the dressing did little for the salad. Today’s supermarkets provide, you with many choices of salad dressings. Yet there are a few I make myself for I find them a little less expensive. SOUR CREAM DRESSING 1 Cup sour cream 2 Tablespoon vinegar 1/2 Cup sugar 1/2 teaspoon salt Pepper Shake the ingredients together thoroughly.
YOGURT DRESSING Juice of i/4 lemon (scant tablespoon) I teaspoon vinegar 3/4 teaspoon seasoning^alt 1/2 Cup plain yogurt I teaspoon mustard With a fork beat together all ingredients, except yogurt until blended. Add yogurt 'yid beat again. Approximately one-half jp. My friend Nelda Poch from Cranbury /gave fne a recipe once for a variation of Williamsburg Inn Regency Dressing which is great served on hearts of lettuce.
WILLIAMSBURG INN REGENCY DRESSING I Tablespoon finely chopped onion (or shallots) 1 Cup chicken broth add slowly to the above I Tablespoon of flour Cook over moderate heat until mixture thickens slightly. Set aside. Keep warm, Put 1/4 Cup vegetable oil in small bowl and beat with whisk. Beat in 3 tablespoon fresh lemon juice I Tablespoon Dijon mustard I lightly beaten egg yolk 1/4 teaspoon salt l/B teaspoon pepper beating with whisk or rotary beater slowly drizzle in another 1/4 cup vegetable oil and beat slowly until mixture thickens. Add the warm stock. Continue to beat. Mixture will be thin. Cool and refrigerate. My grandmother had a special dressing for cole slaw that I would like to share with you. I teaspoon mustard 5 teaspoon sugar I beaten egg 1/2 teaspoon salt 1 teaspoon butter 2 Tablespoon vinegar Mix all the ingredients and cook until thick, stirring constantly to keep from lumping. Cool Heilman’s mayonnaise has listed some variations that I have tried and would recommend. The sweet basil recipe is great on tomatoes.
