BY FLORENCE HEAL Another Exhibit at the Food Tour I attended wng T that of the Cooperative ExtenBion Service A very attractive and informative exhibit had been prepared by Marion Olsrih, Cape May County Extension Home EconomUt, and Sonia W. Butler, Ocean County Extension Home Economist. The exhibit was entitled Jersey Shore Seafood. Tasty treats had been prepared for sampling. Some of the recipes follow:

SEAFOOD APPETIZER SQUARES 1/2 pound cooked boneleaH /i*h, flaked 1 Cup shredded thorp cheddar cheese / (3or> pkR. cream cheese 1/4 cup finely chopped onion 2 Tableiipoonii finely choppedjreen pepper 2 Cup* milk I Cup prepared biscuit mix * egg* 4 1/2 teaspoon salt dash nutmeg

Preheat oven to 400°F. Lightly grease a 9”xt"x/ 1/2” square baking dish. Mix fish, cheeses, onion and green pepper In baking dlsh. Put remaining Ingredients In blender and blend 15 seconds at high speed. Pour over other Ingredients In baking pan. Bake until golden brown and a knife Inserted halfway between center and edge comes but clean. 35-40 minutes. Re/rigerafe until chilled Cut In small squares to serve. Makes 75 pieces.

, SEAFOOD MOUSSE / envelope unflavored gelatUi 1/4 cup cold water I can cream of tomato soup, undiluted I (8oz) pkg. cream cheese I Cup mayonnaise 1/2 Cup finely chopped celery 1/2 Cup finely chopped Jreen pepper 3/4 pound cooked boneless flaked fish Soften gelatin In cold water. Bring soup to boll and add gelatin. Remove from heat. Add cream cheese and beat until smooth. Add mayonnaise, celery, onion, and fish.
