BANANA PUDDING

2 tablespbonns flour 1/4 teaspoon salt
2 cups milk

I teaspoon vanilla . Vanilla wafers 6 Bananas Combine 1/2 cup sugar, flour and salt in top of double boiler; stir in milk. Cook over boiling walcr, stirring until thickened Cook uncovered for IS minutes more, stirr ing occasionally. Beat egg yolks, gradual ly stir in hot mixture. Return to double boiler, cook 5 minutes more, stirring con stantly. Remove from heat; add vanilla Line bottom of casserole with vanilla wafers: top with a layer of sliced bananas Pour a portion of the custard over the bananas. Continue to lay wafers, bananas and custard, ending with custard. Beat egg whites stiff, gradually add remaining sugar and beat until mixture Jforms stiff peaks. Pile on top of pudding. Bake in hot over (450°) for 5 minutes. Serve warm or chilled. Serves 6-8.
GUACAMOLE DIP (Yield Approximately 2 cups) I cup sour cream I large avocado, peeled and diced 3 green onions, cut in I" pieces I teaspoon lemon juice 1/2 teaspoon salt 1/8 teaspoon pepper I small tomato, diced corn chips Place all ingredients, except tomato and corn chips in blender. Cover. Grate smooth about I minute. Stir in tomato by hand Chill covered. 2-3 hours to allow flavors to blend. Serve with corn chips.
