Relishing Beet Recipes

By Florence Ileal For the home gardener beets are ready for harvest. The young beets and their tops arc an excellent source of Vitamins. The beets are delicious when scrubbed and cooked just enough to remove the outer skin and served with butter and season•ings. Beets pickled make a nutritious side dish and a great addition to the picnic fare. PICKLED BEETS 2 cups sliced cooked beets 1 large onion thinly sliced Add the above to a sauce made by combining the following ingredients and bringing the sauce to a boil: 1/2 cup water 1/2 cup vinegar 2 tablespoons sugar 1/1 teaspoon salt 1/2 teaspoon cinnamon 1/1 teaspoon cloves Let stand six hours. Will remain delectable for about 1 weeks. For those Mio like a tart vegetable. Harvard beets isj the answer. For the person with the swe^t tooth beets in orange sauce hit the spot. # HARVARD BEETS 1/1 cup vinegar

1/1 cup beet juice pnd water 2 fab/espoons oornstarch 2 tablespoons sugar Pinch of salt 3 cups choked diced facets Blend vinegar, beet juice, cornstarch, sugar and salt in top of double boiler. Cook until thickened, stirring frequently, add beets. Place over hot water until the beets are heated thrpugh. Yield 8-10 servings. BEETS WITH ORANGE SAUCE 1/3 cup sugar 2 tablespoons cornstarch 1/1 teaspon salt I cup orange juice I tablespoon butter 3 cups cooked diced beets Combine dry ingredients; add orange juice and butter. Cook for 5 minutes in top of double boiler or over very low heat In saucepan. Add beets and let stand for several hours before serving. Serve piping hot. Beets find their way into all parts of the menu except dessert and perhaps the inventive cook will soon discover a dessert. To small baby beets add a mixture of I cup vinegar, 1/2 cup sugar. 2 teaspoons prepared horseradish. Let stand for 1 hours, serve chilled. This' makes a very
