Cook beets in 3 pints water in saucepan un til tender Add lemon juice, sunar and salt; simmer for 15 minutes longer. Beat egg yolks with one tablespoon ct>ld water; gradually add hot beet mixture, stirringJ constantly. Chill thoroughly Beal sourj cream into mixture before serving A very flavorful beet relish is my favorite BEET RELISH 4 cups cooked beets 1/2 cup prepared horseradish 2 tablespoons brown sugar 2 tablespoons granulated sugar

1/3 cup cider vinegar 2 teaspoons salt Put the beets through food processer to grind Add the remaining ingredients and let stand 2 hours.

BEET SALAD

/ package lemon gelatin 1 1/2 cup boiling water 2 tablespoons vinegar M2 teaspoon grated onion (optional) 2 tablespoons horseradish 2 cups diced beets (cooked) 1/2 cup diced celery

1/2 teaspoon salt

Dissolve gelatin in boiling water; add vinegar, onion and horseradish Chill until slightly thickened: add beets, celery and salt. Pour into mold. Chill until firm For additional recipes send a self addressed stamped envelope to the Cape May County Herald. Box 484, Cape May
