With picnic time here what better dish to take on that picnic than fried chicken. Recipes vary for this dish from family to family and region to region. When in a hurry I sprinkle the chicken with salt and pepper and dredge in flour or prepared coating in a bag with a little paprika and shake the bag until the chicken is covered. When I am not in a hurry I dip the chicken

Another friend makes a batter from two cups pancake mix, two packages of Italian salad mix, 1/3 cup of club soda or beer, one

egg beaten. This batter will cover three pounds of chicken pieces and it is delicious. For southern fried chicken clean chicken and cut into serving pieces, roll chicken in flour seasoned with salt and pepper, brown on both sides in hot fat (about 1/2 cup). Reduce heat and cook slowly about one hour, turning pieces to brown evenly on all sides or finish cooking in a moderately slow oven (325°). Country fried chicken is quite similar.
