By Florence Heal What to do with all those string beans? That is the cry of many home vegetable growers as.so many beans mature at the same time. Freezing for future use seems to be the answer for the home vegetable gardener. If not freezing some beans may be saved for future use by marinating them or making three bean salad. To mariante string beans cook them, drain,, add onions and pimentos and cover with Italian Dressing. Store covered in the refrigerator. To the marinated beans add other vegetables such as zucchini, celery, and carrots and serve on lettuce for a delicious salad.

String beans are great in soups, casseroles, quiches, as well as with just plain butter and seasonings. Some of my favorite recipes follow: GREEN BEANS AND MUSHROOM CASSEROLE 3 cups.cooked green beans I can Cream of Mushroom soup 1/2 can milk I pkg. frozen onion rings Place green beans in a buttered casserole. add mushrpom soup and milk. Mix. Top with frozen onion rings. Bake 350° for 25 minutes.
