a recent interview. The Chalfonte, touted as the nation's oldest seaside hotel in continuous istence. is internation famous for its Soutnernstyle cooking. Helen’s spoonbread, eggplant casserole, deep fried blue fish and crab meat cakes are just a few of her culinary delights. Perhaps her homemade hot rolls are the most celebrated. THE 106-year-old Chalfonte is managed by two school teachers, Judy Bartella and Anne LeDuc They took over from Mrs ,8atterfield several years ago when the latter declared she had operated the business long endugh and developers had shown an interest in the property. Bartella and LeDuc kftew the hotel’s history well and didn't want to see it

destroyed. LeDuc has been coming there every summer since her childhood. They turned the business' around by introducing in-, novative ideas for restoration of the historic land- - fnark.
