Recipes For Bright Brunch

By Florence Heal ^ The period between Thanksgiving and Christmas is a tmsy season not only for shopping and the making of Christmas gifts, but also as a period of social activities Brunches have become a very popular wav of entertaining. A brunch starts the day in a relaxed festive way. It is a time to appreciate an especially good morning, whether it be With family or with a group. The time is as flexible as the feeling. A brunch I have served and has been enjoyed by both family and guests includes: tomato-clam cocktail; chicken or crab casserole; heat & hold scrambled eggs; celery, cauliflower flowerettes; chernfr tomatoes served with sour cream and lemon juice di#sing; coffee cake; fresh fruit bowl, and coffee. jr

Vegetable-Clam Juice Cocktail 4 cups V-8 juice 4 cups bottled clam juice J4 cup lemon juice 1 teaspoon Worcestershire sauce J4 teaspoon salt Few grains white pepper Combine all ingredients in large pitcher and refrigerate until serving time. Serve in old-fashioned glasses with a celery stick for stirring. Serves ]$.

Chicken Casserole 3 tablespoons butter 6 tablespoons flour* 2 cups chicken broth 1 cup light cream 1 teaspoon prepared yellow mustard teaspoon salt Dash pepper 1 /8 teaspoon allspice 1/6 teaspoon ground nutmeg teaspoon sugar 1/8 teaspoon cayenne pepper ft teaspoon paprika ** ft teaspoon seasoned salt ft cup dry sherry ' 4 hard-cooked eggs,'cubed 4 cups cooked chicken, chopped Buttered bread crumbs Melt butter in saucepan and stir in flour until smooth. Over low heat, slowly blend in broth and the cream.- Cook over medium heat — stirring constantly — until thick. Combine all seasonings, then blend into sauce. Stir in wine; fold in eggs and chicken. Turn irtto a buttered three quart casserole, top with crumbs and bake at 350° for 30 minutes. Left over turkey may be substituted for chicken. Yield 10-12 servings.

Crab Casserole I pound crabmeat 8 slices bread ’ ft cup mayonnaise • I cup chopped celery ) I green pepper, chopped l medium onion, chopped ft teaspoon salt / 4 eggs, slightly beaten 3 cups milk I can cream of mushroom soup ft cup shredded Cheddar cheese Drain crabmeat and cut into chunks. Dice half the bread into the bottom of a large buttered casserole. Combine the crabmeat, mayonnaise, celery, green peppers, onion, and salt. Spread over the diced bread. Trim crusts from remaining bread, dice and spread over the crab mixture. Mix eggs and milk together, and pour over bread. Cover and refrigerate several hours or overnight. Bake at 350° for 30minutes. Remove from oven and spoon undiluted mushroom soup over top. Sprinkle with shredded cheese. Return to oven and bake one hour longer. Yield 0-10 seiaringk. Heat and Hold Scrambled Eggs ft cup butter 12 eggs 1ft cups milk 1 teaspoon salt 1/8 teaspoon pepper \

2 tablespoons all purpose flour 1 tablespoon chopped pimento 1 tablespoon chopped parsley Melt butter in large skillet over low heat. Combine the remaining ingredients in large bowl. Beat until smooth and well blended. Pour into skillet and stir from outside edge of skillet. Continue stirring until all eggs have been cooked and the mixture has a creamy appearance. Yield 8 servings. For the dressing of the raw vegetables, I mix one cup commercial sour cream with two tablespoons lemon juice and one teaspoon of dill weed. Chill thoroughly. Each year visitors from as far as Phila. come to view this unique miniature railroading display. A donation of $1 for adults and 50 cents for children is requested.
