(From Page 1) every penny I could." AT THE SAME TIME he became involv ed in byying houses, renovating them (with his step-father), and selling or ren ting them There wds a second reason to join the police department "I get bored very easily I felt it would be interesting, stimulating, exciting. I intended to be a policeman long enought to qualify for the lOyear pension plan He missed that goal by one year, one month and one day Philosophy also led Piersanti to the
police department Influenced by existentialist Jean-Paul Sartre, he felt that "it was time for the intellectuals to dirty their hands with the fabric of society, to try to change it on ground-level basis. I hoped to do that on the Philadelphia Police Department, to affect the environment I worked
in, to arrest criminals, save lives.
"Later on I found out it’s hard enough
just to save your own skin."
Piersanti, calling his unit the best in the city, was commended a dozen times for extraordinary police work. His only injury: torn ligaments in his left ankle. His best

minutes on a gunshot victim given up for dead. The youth lived. But Piersanti never lost sight of his "10-year plan to become self-employed. I was working below my level of ability. It was not my ultimate end; the human personality has to keep growing." HE KEPT AN INDEX of about 40 barrestaurants he’d looked at, but Capq^tAy, his vacation spot for several years, was his prime goal. "It’s a beautiful city," he said. "I love the architecture, the friendly people. It has a culture the other South Jersey towns lack. It’s more sophisticated '' His Cape May friends included fellow Temple students David and Susan Kornaki, now bartender and book- - keeper/hostess at the Shire, and Rantuccio who introduced him to its owners, the Gino Giansante family. They were ready to sell The "deciding factor" came on Dec. 9, 1981, when Piersanti’s close friend on the police force, Dan Faulknqt was shot to
death.
"That was too close for me." he said. "I never went out on the job again without a bulletproof vest. I decided to get out before it happened to mv Thi§ place is almost dedicated to thar night •I COULDN’T AFFORD this with my resources," said Piersanti. so he got ^ together with his cousin. Thomas Mallozzi, ; /an ora) surgeon in Philadelphia who was looking for an. investment. They went 50-50. Negotiations began a year ago, a mortgage was arranged in April, settlement made May 18 and Piersanti took over on May 19. Piersanti. his restaurant experience limited to frying hamburgers on the Wildwood boardwalk 15 years ago. took ovei just as the busy summer season
began.
"I knew business and I knew figures," he said "I’m a quick learner and I figured if anybody could do it, I could. He made mistakes. For example, he quickly ordered new copies of the menu, costing $200. then decided to reduce it from 23 items to eight or 10 before the menus even arrived. And he also made brilliant moves, like hiring Elian Shaw, "a big part of this place," as his cook and kitchen manager They meet daily to plan menus and order
food.
"I’M A VERY fortunate guy to achieve this in 10 years," said Piersanti. "But my personal life suffered quite a lot, working two full-time jobs, a policeman nights and pounding nails for six or seven hours days I have no wife, no girlfriend, no real relationship. "The money is fine, but it’s not the most important thing in life. If I can’t change society, what can I do to change me?" Piersanti is undecided about the longrange future He talks of polling investors "to buy several places like this." of expanding the eight-unit Beachside Motel his mother and stepfather bought in Cape May two years ago, and of "retiring and going back to graduate sohool " He has six of the 30 hours he needs for his doctorate. "Many great philosophers were
wealthy,"be said. '"They didb’t need a job. They were able to philosophize as a leisure. •YOUR CHARACTER shows in everything you do,” adodd Piersanti. "As Sartre said, you're nothing more than the sum total of your acts. I manifest my personality in everything I do in this restaurant. "I told that to my dishwasher," he said. "I said, ‘Your character shows in everything you do, whether you take the dish out of the dishwasher clean or dirty.' "He looked at me like 1 was crazy. And he quit two weeks later.”
