By Florence L.D. Heal Saint Valentines Day is (lie most publicized romantic holiday of the year. Heart-shaped boxes and cupids adorn shop windows. It is the time when many homemakers go to the upper shelf of the kitchen closet to find heartshaped molds for cakes and cookies used once a year. The most important thing is to prepare at your valentine celebration the food that the family like best. My family is very fond of chocolate, so I sometimes make my fudge cake recipe in the heartshaped pans. FUDGE CAKE < tablespoons butter 2 cups sugar 2 eggs 2 cups cake flour 1 teaspoon vanilla 2 teaspoons baking powder y 4 teaspoon salt cups milk 4 squares chocolate melted (4 oz.) I cup chopped nuts Cream butter, add sugar gradually, and cream thoroughly Blend in the well-beaten egg yokes Sift flour once before measuring Sift flour, baking powder and salt together and add to the creamed mixture alternately with milk. Beat just enough to make the batter smooth Blend in the melted

chocolate, vanilhrandnuts. Fold in the egg whites, beaten until stiff but not iry. Pour into the greased and floured pan. Bake at 350°F. Bake for 45 minutes if cooked in layer pans. Approximately 55-00 minutes if baked in large heartshaped pan. Cool on rack before icing. CHOCOLATE FROSTING 4 square* unsweetened chocolate M cup butter I package confectioner's sugar cup milk I teaspoon vanilla Melt chocolate and butter or oleo in a mediumsized saucepan over low heat. Remove from heat. Stir in the remaining ingredients gradually. Beat with spoon until smooth and thick enough to spread. Makes enough frosting for two nine-inch layers or one large, hear*-shaped cake pan. ANNIVERSARY CAKE Sift together and set. aside: 3 cups sifted cake flour 4 teaspoons- baking powder I teaspoon salt Combine and beat until fluffy: 3/4 cup plus 2 tablespoons butter or oleo 1 Mi cups sugar Add apd beat well: 4 eggs 2 teaspoons vanilla Stir in - do not beat Flour mixture alternate!) with 3/4 cup milk. Fill greased and floured pans Baked 375°F 20-25 minutes SNOW-PEAK FROSTING iy 4 cups while corn syrup 2 egg whiles Pinch of salt I teaspoon vanilla In a small saucepan, heat com syrup till boiling With electric mixer at high speed, or with egg beater, beat egg whites until they form soft peaks. Add salt. Slowly add the syrup, continue to beat until the frosting is fluffy and forms peaks. Fold in vanilla. Note: If in the above cake recipes you are using regular flour instead of cake flour, usfe for 1 cup cake flour'' one cup of regular flour minus 2 tablespoons. Simple sugar cookies may be rolled and cut in heart shapes and decorated with icings and heartshaped candies. Next week, some cherryflavored recipes to tie In with Waahinglon'* birthday.

The folks at Fantasy Records do an amazing job of tastefully repackaging vintage jazz. Their series of double albums have been praised by critics worldwide and for good reason. One is always treated with super rare recordings by some of the biggest names in jazz. Each collection has thorough liner notes eithdr written by someone closely associated with the band leader or a noteworthy jazz scholar. With that in mind, I wholeheartedly recommend any jazz reissue from the Fanta’sy/Milestone/Prestige family of labels. Of special interest should be the following. THE SUDDEN death of Bill Evans in 1980 robbed the jazz world of a highly talented pianist and composer. These sides which were recorded in 1962 cap^ turc Evans in the right

light. His solos could be aggressive, but what always set Evans apart from others was the fact his playing was so smooth and flowing, giving almost a classical flavor to his jazz. The support from his musicians — especially drummer Phllly Joe Jones, guitarist Jim Hall, saxophonist Zoot Sims, and a youthful Freddie Hubbard on trumpet is sublime. Check out the Interplay Sessions. The same can be said for the late great Theloniou* Monk joint album with Gerry Mulligan, titled Round Midnight. These two jazz leaders met in 1957 and they meshed perfectly. Mulligan's baritone sax is smooth and even in contrast to Monk's off-beat, humanistic piano solos. Technically many other musiciaas were superior to Monk, yet few could give as

much warmth or humor to their music Add to that Monk's ability as a composer and one has to admit Monk truly was a unique genius. The Alternative Wes Montgomery is a collection of different takes from previously released versions. Throughout these four sides, one gets the idea of why Wes Montgomery is considered one of the most innovative jazz guitarists who ever lived. His solos were bright, nelodic and well thought wR, and his ability to play in octaves gave him h style few could steal. Wes Montgomery was quite effective at creating a mood with his soloing. Unfortunately, . many remember Montgomery for his latter work, which was more pop than jazz, but theaeagMes are proof that Wes Montgomery was an exceptional musician
