February Sparked By Cherry Dishes

By Florence L.D. Heal February is the month when the story about George Washington and the Cherry Tree is retold many times to children. Cherry dishes have become a part of February. Here are some of my favorites: Molded Salad I package cherry /lavored gelatin I Cup boiling water I (J Of.; phg cream cheeee l Cupe canned black cherriet (pitted a drained) IM Cup block cherry juice (from canned block cherriet; Dissolve gelatin in boiling water, mix cherry juice with cream cheese, using a rotary beater, and add to dissolved gelatin. Stir in cherries. Pour into mold. Some people avoid making a molded salad due to the fact that they have a hard time removing them from the mold. Here are some helpful hints. 1. Rinse mold in cold water just before putting in the gelatin mixture. 2. Be sure your salad is firm before trying to unmold. 3. When ready to unmold, lower the mold quickly into a bowl of hot water (not boiling). Be sure the water does not come over the top of the mold. Hold for an instant. Then lift the mold out of the water and, with the point of a sharp knife, loosen jelly from side of mold. 4. Place a plate firmly over the top of the mold, holding the plate and mold firmly together. Reverse, putting plate on bottom. Lift the mold gently. A delightful and different pie that will perk up a winter meal is as follows.
Rhubarb-Cherry Pie 4 Cupe /men diced rhubarb 'I Can pie cherriet. drained I Cup tugar K Cup quick cooking tapioca Few drape red food coloring Pit Cruet for top * bottom o/ pit plate Combine rhubarb, cherries, sugar, tapioca, and food coloring. Let stand 15 minutes. Prepare pie crust. Put filling in pie crust. Add top crust. For sparkling top, brush with milk and a small amount of sugar. Bake in hot oven (425 degrees 45-50 minutes. If your family is not a pie and cake lover family they may enjoy the following: Fruit Floating Island 1 Cupe milk K Cup tugar ! Mix sugar, flour, and salt throughtly, add to milk, stirring until mixture is slightly thickened. Remove from heat. Beat egg yolks and egg slightly, pour milk mixture into eggs while stirring; then return to the double boiler, cook 2-4 minutes until the mixture coats spoon (do not bring to boil or custard will curdle). Remove from heat, add vanilla and cool. Place a layer of fruit in bottom of individual dessert dishes and cover with custard. For meringue, beat egg whites with salt until stiff but not dry. Fold in sugar. Drop by teaspoonfuls on oiled cookie sheet. Bake at 375 degrees F. for 10 minutes. Lift meringues from cookie sheet and place carefully on custard.
