Nutrition and diet are going to be our watch words for the next few weeks Americans are supposed to be the world's most conscious people in terms of their diets. But, I'm .sure you'll agree it's extremely hard to put all the nutrition information we hear into the practice of our daily lives! The thought of a nice ice cream sundae is enough to get me to put down my pen and run off to the ice cream parlor; a steak dinner would be nice, too. But, no!! They say that if you're going to shell it out. you have to be able to take it The health guidelines we discuss in these columns are those which I. myself, manage to follow, as well as recommend. "MANAGE" IS a good word, because we are only human and subject to our early childhood conditioning It is not one of) my instincts to avoid red meat — to this day i^iy mother equates a show of love with serving up a nice barbecued steak. It is my instinct to eat the steak and enjoy it! I have a lot of respect for people who can change their eating habits and stick with it. I also have a lot of compassion for people who have trouble changing their diet-it's difficult to do Yet. when you think about it. it makes a great deal of sense that the food we eat can dramatically af feet our well-being After all. it is food which our digestive processes break down to form our cells We literally are what we eat’ We all know people who can eat anything they want, smoke all they want, and still make it to over 90 years old There are even people like that in my own family. None theless, the fact is that most people are affected by w-hat they consume and can benefit from diet changes based upon preventive medicine M () S TOKO l It knowledge about the possi ble effects of diet comes from cross-cultural comparisions One of the ad vantages of our world’s be mg so small is that we can

compare the health status of people in different countries. We can compare the factors that make one people different from another, and then experiment to change our behavior to match theirs. Some health behaviours have been tested long enough that we have documented evidence that they work here in America, as well as the area of origin. Now, you may ask, what about genetics’’ Don’t peo pie from one country have inheritance of disease dif ferent from another? This is sometimes true, but not that often Most inherited disease characteristics pass between family members, regardless of the country of origin. In addition, people have been followed from their country of origin to where they settle in the United States, and frequently they become susceptible to disease that would be unexpected were they living in their original country There is good evidence that they changed some things about themselves when they came to America to make them susceptible to the new illness Very fre quently what was changed is- their environment and diet In the next few weeks we will discuss the relationship of diet to cancer and other diseases, we will also cover types of diets Uhe Pntikin. for examplei Also. I will give a personal opinion on what health measures might be good diets for you to consider Before we continue, a few important points must bo made. 11 You should not make radical changes in your diet without first discussing with your fami ly physician whether the change can adversely af feet you in any way 2) All things in moderation The body has a delicately balanced chemistry; going overboard on any diet can upset this balance Try new diet measures gradually so that you can stop if the measure doesn't agree with your particular constitution
