Cookin'.the Catch New England: The Easy Way

(Recipes collected and tested for excellent seafood preparation) Clam chowder has two faces. There's the rich, vegetable and tomato-filled Manhatten variety with its chunks of clams for flavor, and then there’s the other side of the coin, that creamy, zesty, flavorful white concoction called New England clam chowder. That’s the chowder that makes mouths water and soup sippers stand up for more, and that’s the blend we’re going to talk about today. With a little cheating on the chopping, the creaming and the agonizing, we’re going to make it the easy way. Chefs have gained notcriety with their own special blends of New England clam chowder, and here’s the formula lor you to gain your own brand of fame with.

CHEATIN ChOWDER This recipe serves three nicely and you can double, triple, multiply it as much as you like. It’s delicious in any amount. Dice 4 slices of bacon and cook in a threequart saucepan over medium heat with V4 Cup chopped onion until the bacon is crisp and the onion is tender. Stir in 1 can of condensed cream of potato soup, 1 can condensed milk (ISW oz.), a soupcan of whole milk, 1 or 2 cans chopped clams (juice and all) or l cup chopped clams with nectar. Add 1 Tbsp lemon juice and V4 tsp. pepper Heat throughly, being careful not to bring to a hard boil. Stand up and be counted You’ve just become the Chef of the week with your cheatin clams!
