Don't Turn Up Your Nose ...
(Recipes collected and tested for excellent seafood preparation) By DIXIE L. ANDERSON •’ixing a filet can be the nicest way to serve fish. The skin is gone, the bones are eliminated, and you have one solid piece of fish for preparation. FILLET OF WONDERFUL This recipe can be geared to any soft-filleted fish, or any that you generally would broil. Try Bluefish (being sure to remove the long dark strip of meat down the side of each fillet. This produces the oily or fishey taste and, when eliminated, you have a sweet, succulent piece of fish.) You can make this dish with Weakfish, Bass, your favorite. Just be sure to try this delicious catch recipe. Place your fish fillets on the brolier rack. Squeeze fresh lemon juice over each fillet. Now mix together very well, in equal amounts, horseradish and mayonnaise. Don’t turn up your nose, you're in for a treat. Spread’ the mixture over each fillet liberally. Sprinkle paprika over all. Broil four to six inches from the element (flame) for six to ten minutes or until the tops are brown and bubbly and the fish flakes easily with a fork. Serve for your family or guests (it’s that good) with a good tossed salad dressed the way you like it, crisp garlic bread and a split of your favorite white wine. They're going to love you for this one!
