A firm, white fish a fresh sweet taste, it is drten referred to as the poor man’s answer to lobster. You don’t have to be poor to try it though, and when you do, I think you'll find it lives up to all that’s said about it Poached, it does indeed taste like lobster, no matter how you fix it. Tile stands alone too, and here's a special recipe using the firm Hesh of tilefish. Use it for a special dinner party. It’s that good! TILEFISH BAKED IN WINE 2 pounds of tilefish fillets I can sliced baby tomatoes I small onion, chopped I can drained, sliced mushrooms 1/2 cup sherry 1 cup sour cream 1/2 cup grated Parmesan cheese I tbsp, fresh lemon juice paprika

Put fillets in a 9 x 13 baking dish, and layer the tomatoes and onions over them. Pour 1/2 cup dry sherry over all Spread the sour cream over the layers, covering to the edges. Sprinkle the grated cheese over the cream, and then drizzle the lemon juice over the cheese. Sprinkle with paprika Bake at 350 degrees for about 30 minutes, 'til the fish flakes easily. Serve your tilefish with your favorite green bean dish, steamed rice, a crisply tossed salad and hot rolls. The addition of a semi-dry white wine in pretty long stemmed glasses will compliment the meal, and your guests will be referring to you as the Perle Mesta of your block!
