Too Much Zucchini?

Add It to Everything!

By FLORENCE HEAL Anyone who has grown zucchini knows that if the crop is successful you have too many zucchini. Your family will have zucchini soup, pickles, bread, cake, casseroles, salads, and zucchini as a vegetable, raw or cooked. In a previous article recipes were given for soup, bread, pickles and casseroles. I will share a few other recipes we enjoy at our house. ZUCCHINI-TOMATO CASSEROLE y? lb. American cheese, sliced 4 tbsps. melted butter 3 cups rye bread cubes 4 cups thinly sliced zucchini 1 medium onion, thinly sliced 3 tomatoes, sliced % cup finely chopped green pepper % tsp. salt Pour melted butter over the bread cubes; mix thoroughly Place a layer of Zucchini, onion, tomato, and green pepper in a three quart casserole, using onethird of each. Sprinkle salt and pepper; cover with four slices of cheese and a layer of bread cubes. Repeat layers twice. Cover and bake at 350 degrees for one hour and 30 minutes. Serve hot, Yields eight servings. ZUCCHINI PIE 5 slices bacon, diced 1 clove garlic, pressed 4 cups cooked zucchini 3 eggs, beaten y, cup milk I cup soda cracker crumbs '

y, cup grated Cheddar cheese paprika Saute bacon and garlic; combine all ingredints except cheese and paprika Place in a buttered 7x11 pan; top with cheese. Sprinkle with paprika. Bake at 350 degrees for 30 minutes, Yields four servings. ZUCCHINI PARMESAN zucchini vegetable oil * grated Parmesan cheese Slice zucchini into lengthwise strips one-quarter inch thick. Place on baking sheet; rub top surfaces with oil. Sprinkle generously with cheese. Broil for six to eight minutes or until golden brown.
