MY STUFFED ZUCCHINI 4 zucchini, trimmed 2 tbsps. minced onion 2 tbsps. butter I slice bread, finely broken 14 cup cooked tomatoes salt and pepper Cook zucchini in boiling salted water for; 10-12 minutes. Cut in half lengthwise; scoop out the soft center and place in a bowl. Add all remaining ingredients to squash pulp; mix well. Fill in zucchini shells with mixture. Place in a shallow pan. Bake at 350 degrees for 15 minutes. I was asked to repeat one of the recipes from last year by a reader who had misplaced hers.

AVALON — Despite threatening clouds and a rising tide there were more than 40 entrants in the recent Avalon sand sculpture contest. Youngsters and adults alike worked to create winning creations in sand. There were new and original ideas as well as the usual sand castles, boats and turtles.
