Cookin' the Catch ) Don't Skimp . On the Shrimp (Recipes collected and tested for excellent seafood preparation) By DIXIE L. ANDERSON Shrimp cocktail! As you find it listed under appetizers on the shore menu, you inhale lovingly as visions of deliciousness pass through your head, and you order it as the beginning of what is sure to be an excellent meal. The fresh seafood found here at the shore and served in the area's fine restaurants is so crisp it seems to swim towards your table, doesn’t it? Vacation time, though, is the time to enjoy someone else’s cooking. When you go home you can do a little seashoring too. There’s a new way with shrimp cocktail from the Far East, and if you like curry and bejng a little different offer this treat to family and friends when you start cooking again. ^ DIXIE’S CURRIED SHRIMP COCKTAIL IJ4 lbs. shrimp, cooked, cleaned and chilled 2 cans water chestnuts, cut in thin slices ^ cup thinly sliced celery y 4 cup riiced green onions, tops and all salad greens Mix the first four ingredients. Place salad greens as a liner in long-stemmed cocktail glasses and pile in the shrimp mixture. Top with: CREAMED CURRY SAUCE Mix together: three-fourth cup sour cream, one tablespoon lemon juice, one teaspoon Kikkoman soya sauce, one teaspoon curry powder. Top the shrimp mixture and chill until serving time. Congratulations! When you offer this delight to guests, you've made yourself eligible for a blue ribbon in shrimp cocktail cookery!
