Fill Up On Filet (Recipes collected and tested for excellent seafood preparation) , By DIXIE L. ANDERSON Flounder, sole, Tilefish, Weakfish, Striped Bass. All, when fileted, are something special;,and seasonings, sauces and surprises added to them give taste treats to all of us. These specialties are created by seaside chefs, and you should always experiment a little when you order from the shore's vacation menus, because those chefs have done wonderful things to fish that will delight you. Here’s just such a wonderful recipe, utilizing some of those flavor treats that add just the right tone to the filet you choose to cook. Try it...we'll guarantee you’ll like it! FILET OF DECEPTION 6 filet of fish (any of the above) 4 tbsps. butter 6 mushroom*, sliced cup sour cream ft cup mayonnaise , * 2 tsps. lemon juice 2 dozen seedless grapes Wash the filets and wipe dry. Place them in a shallow baking dish. Dot with butter. Melt three tablespoons butter in a skillet. Slice the mushrooms and saute in melted butter. Pour mushrooms over the filets with the butter. Make a sauce by mixing the sour cream and the mayonnaise together with the lemon juice. Spread this carefully over the filets. Top with the grapes. Bake 20 to 30 minutes at 350 degrees. Test for doneness. Filet will flake easily with a fork when done. Serves four nicely. Sound a little funny? You’re wrong...it’s fun instead. A great way to cook any catch.
