Stretch Seafood - With Cool Salads By DIXIE L. ANDERSON Sometimes the catch is too small to prepare enough for everyone. In that case, it’s good to think about stretchable salads. Leftover baked fish can be used in seafood salads, and while most of us think in terms of shrimp, lobster, and crab, bluefish pieces are delicious included in the ingre dients that are normally served as salad fare. ' Here's a big salad. Use any fish you like, but it’s especially good with shrimp. A combination of flavors is possible and good. NORMA’S SUPPER SALAD 1 7 or. package elbow macaroni, cooked and chilled I large can pineapple chunks, drained and halved I cup shrimp, cut in half lengthwise I cup thinly sliced or diced celery /" / cup sliced stuffed olives I cup diced sharp Cheddar cheese 1/4 cup chopped green pepper 4-5 sliced green onions, tops and all I cup salad dressing or mayonnaise salt and pepper to taste Combine all ingredients and chill at least an hour before serving. This salad tastes better if it is in the refrigerator overnight. It will serve eight to 10 people, and it’s a neat luncheon salad. (”~ . * Make a little fruit brehd, stir up some iced tea, and sit down to enjoy some of the best seafood salad you’ve ever tasted. (You can substitute chicken, hahi, crab or leftover cooked fish in this recipe, or combine th?m, if you like) In this case, it’s the more the better!
