Dips Tasty Pare For New Year Fete

By FLORENCE L'.D. HEAL Having a New Year’s party is a good way to have your friends in to help you issue in a New Year. My menu for such an affair would include several dips; some hot, some cold, some served with crackers, some served with fresh vegetables. For example this year I expect to prepare the following: BLUE CHEESE RING 1 envelope gelatin (sprinkled over v 4 cup cold water to soften) 6 oz. Danish blue cheese, sieved 6 oz. cream cheese, sieved M; cup heavy cream 2 tablespoons minced onion 6 black olives, pitted and chopped Salt and pepper to taste . Stir softened gelatin over a pot of hot water until it dissolves. In a mixing bowl, combine the rest of the ingredients, blend in heavy cream and gelatin (cooled). Beat well. Pour into a lightly oiled 3-cup mold and drill until set. Unmold onto a round platter and garnish. Serve with crackers. Wheaton Gets Pilot’s Wings N. WILDWOOD — Second Lt. Edward J. Wheaton, son of James E. and Lorraine C. Wheaton of 200 Surf Ave., has graduated from U.S. Air Force pilot training, and has received silver wings at Reese Air force Base, Tx. Wheaton will now serve at Pope Air Force Base, N.C., with the 39th Tactical Airlift Squadron. His wife, Anne, is the daughter of William C. and Mary Rueter of Philadelphia.

2 tablespoons chives, chopped 1 anchovies, chopped 1 tablespoon^ tarragon vinegar Blend all ingredients in blender. Serve with fresh vegetables. HOT CRAB DIP 2 large pkgs. cream cheese 2 large cans crabmeat (drained) 1/3 cup mayonnaise IMe teaspoon confectionery sugar cup dry white wine (sauterne) IVz teaspoon prepared mustard 1 teaspoon grated onion Vi teaspoon Worcestershire sauce Seasonings—salt. Accent, and garlic salt Combine all the ingredients except crabmeat aqd wine. Mix well. Then add crabmeat and wine and heat. Serve in a chafing dish. CHEESE PUFFS 4 pound butter 1 loaf bread (unsliced) 4 pound of Old English sharp cheese Mix butter and cheese in mixer. Cut unsliced bread in 1-inch cubes. Remove crust from the bread. Spread with cheese mixture, and put on tray. Freeze at least 24 hours. Take out just before serving time. Bake 350 degrees 8-10 minutes, or until golden brown. Note: Spreading is easier if you use frozen bread. Frost all sides but the bottom. I usually prepare a recipe of puffed pastry or purchase Pepperidge Farm puffed pastry. Roll the puffed pastry and cut into circles, squares or oblongs depending upon the filling. I use hot dogs, olives, ham spread, cheese, mushrooms, chicken, and seafood mixtures for the centers. These can be prepared and placed in the freezer. Bake for about 10 minutes at 350 degrees right after you bring them from the freezer. The rest of my menu would include a baked ham, roast beef, olives,

pickles, potato chips and rolls. Also I will have lettuce, tomatoes and other fixings for a salad. Top all of this off with a large bowl of cut up fresh fruit and a

variety of cookies. A cup of coffee for those who might have celebrated too much at the punch bowl. Looking forward to a very happy New Year.
