A 'Come as You Are ' Brunch

\ Bv FLORENCE L.D. HEAL This weekend is, for the seasonal shore resident, a time when a lot of visiting takes place to find out all the news of the winter. Why not invite some neighbors in for a brunch? A "Come As You Are Brunch" gives them a break from chores such as cleaning, painting or mowing the lawn. The standard Bloody Marys and Whiskey Sours would be a good beginning. You might also serve Spiced Melon Balls. They are easy to make and quite good. Spiced Melon Balls 2 ripe melons 1/3 cup confectioners' sugar 4 teaspoon ground ginger HALVE TWO ripe melons and remove seeds and pulp. Scoop out the flesh with a melon-ball cutter and put balls in a bowl. Smooth, the insides of the shells «-ith a spoon and reserve the shells. Toss the melon balls with 1/3 cup confectioners' sugar, sifted, combined with 4 teaspoon ground ginger. Divide the melon balls among the shells and chill them, covered, for at least two hours. For the hot dish Honey Glazed Ham Slices with Poached Eggs is attractive or wholesome. Another of my favorites is Spoon Bread Souffle. Honey-Glazed Ham Slices with Poached Eggs IN A LARGE skillet combine l cup honey. 2 tablespoons butter, and a teaspoon of Dijon-style mustard over moderate heat Heat 4 pound of sliced baked ham, a few slices at a time, in the glaze, turning the slices, until thoroughly heated and coated with the glaze. Roll the slices loosely and arrange on a heated serving dish Arrange 4 poached eggs on the ham slices and garnish the dish with spiced crab apples and sprigs of parsley This recipe serves four. To increase just double the ingredients. Spoon Bread Souffle 3 cups milk 1 4 cups white cornmeal 3 tablespoons softened butter 1 4 teaspoons salt y4 teaspoon baking powder 6 eggs IN A HEAVY saucepan scald milk over low heat. Sprinkle in the cornmeal. stirring, and cook the mixture. stirring until it is thick and smooth Remove the pan from heat and stir in the softened butter, 14 teaspoons salt and the baking powder. Beat in the egg yolks, one at a time. In a large bowl beat the egg whites with a pinch of salt until they hold a stiff peak. Stir in one fourth of the whites into the cornmeal mixture, pour the mixture over the re-

maining whites, fold the mixture together lightly but thoroughly. Pour the mixture into a well buttered '24-quart baking dish. Bake in a 375 F. oven for 45-50 minutes, or until golden brown. Serves 8. Serve a variety of breads, rolls or croissantes. I like Sesame Toasts with the ham slices. Sesame Toasts IN iA SAUCEPAN melt three sticks of butter or , oleo with two crushed garlic cloves, 4 teaspoon thyme, and salt and pepper to taste and remove and disgard the garlic. Cut two inch loaves of Italian or French bread into 4-inch slices and dip the slices into the butter mixture. Spread one cup sesame seed on a sheet of wax paper, roll the bread crusts in the sesame seed, and sprinkle on e^ch side of each slice with sesame seed Put the slices on a baking sheet, bake in oven at 400 F. for 25-30 minutes, or until they are lightly toasted. I would finish off "the brunch with a big bowl of fresh strawberries, if available, or bowl of fresh fruit and Coconut Angel Food Cake. <2. Coconut Angel Food Cake IN A LARGE bowl beat eight egg whites with 4 teaspoon salt until they are frothy, add 4 teaspoon cream of tartar, and continue to beat the whites until they hold soft peaks. Sprinkle 1 2 cup sugar over the whites. 2 tablespoons at a time, and continue to beat until they hold stiff peaks With a rubber spatula fold in 1 a cup more sugar, gradually and 4 teaspoon each of vanilla and almond extract. Sift 4 cup cake flour and then sift flour over egg whites, one fourth

at a time, folding it lightly into the whites. Fold in 4 cup shredded unsweetened coconut, spoon the mixture into a nine-inch tube pan. bake at 275 F. for 14 hours. Remove the cake from the oven, suspend it upside down on the neck o{ a bottle for two hours. Release the cake from the sides and center tube with a sharp knife. Turn the cake right side up. frost it with orange frosting, and mask the sides with 1 cup shredded unsweetened coconut, toasted. Orange Frosting In the bowl of an electric mixer combine 1 1 4 cups sugar, 2 egg whites, 1 j cup orange juice. 1 tablespoon light syrup, 1 teaspoon grated orange rind, and a pinch of salt. Set the bowl over a saucepan containing 3 inches, of boiling water and whisk the mixture until it is hot and foamy Beat the mixture at high speed until it is cool and holds stiff peaks. Makes about three cups. Postcard Art Topic CAPE MAY — "Artists of the Postcard Daze" will be the subject of an illustrated talk by W.A Schilling, local deltiologist. at the County Art League. 1050 Washington St.. 7:30 p.m. today. Schilling will show scores of antique postcards depicting designs and artwork of the times. The drawings of dozens of artists will be reviewed. There will be a charge.
