CAPE MAY - Trolley, walking and house museum tours will be featured every week in June in the nation's oldest seashore resort. To help acquaint visitors with Cape ,May's Victorian splendors, [the Nfid-Atlantic Center for 'theUrts (MAC) will Trolley Tours of the National Landmark District are one-half hour long. In June, MAC will offer two distinct trolley tours: The Historic East End Tour runs approximately every 45 minutes on Saturdays from 11 a.m. to 3 p.m. - - < departing from the trolley ^ stand at Beach Drive , at Gurney Street), on Mondays from 10 a.m. to 12:15 p.m. (departing from the Information Booth bn the
Washington Street Mall, at Ocean. Street), and on Wednesdays fifom 11 a.m. to 3 p.nk ( alsbXdeparting from the Mall fnfbrmation Booth). V THE HISTORIC ' West End tour runs approximately every 45 minutes on Sundays from II a.m. to 3 p.m. and on Fridays from 1 p.m. to 3: 15 p.m. (on both days departing from the Mall Information Booth). Walking Tours of the National Landmark District, one and one-half hours long, depart from the Washington Street Mall Information Booth on Saturdays, Sundays and Wednesdays at 10 a.m. Tours of the Emlen Physick Estate at 1048 Washington St. This Stick Style mansion, was design-
t ed by famous Philadelphia i architect Frank Furness, and was completed in 1881. » It contains an i authentically-restored Victorian House Museum, t Estate tours also include the Carriage House (now i home of the County Art I League) and a small barn i displaying a collection of i antique tools.
These tours are one and one-quarter hours long. They will run every 45 minutes Saturdays, from 11:30 a.m. to 3:15 p.m.; on Sundays, from 11:30 a.m. to 2:30 p.m.; on Mondays, from 10 a.m. to 12:15 p.m.; on Wednesdays, from 12:30 p.m. to 2:45 p.m.; and on Fridays, from 12:30 p.m. to 2:45 p.m.

Kettle Of Fish « She-crab Soup / A Tasty Tradition
By DIXIE L. ANDERSON (Soups from the sea, prepared simply for dining delights) She-crab soup is a tradition from Charleston. S C. It combines white crab ? meat, mace and She-crab roe (eggs) to create a dining delight sought after by the most avid gourmet. There are several recipes for this soup, and of course, each recipe has an originator who claims its merits above the other formulas that are available. I Crab roe used in this soup ^ is found inside the female crab, and you are always admonished to throw back female crabs with egg sacks outside, under their aprons SINCE IT IS often impossible to find the golden roe here, crumbled egg yolks are substituted for the crab roe, and the flavor is surprisingly, nearly the same You serve this soup hot. in Warm bowls with a small pitcher of sherry on the side to be added to your taste. Garnish your SheK*ab soup with lemon rings IHfc^apnka ^Sfite-CRAB SOL F Cook four tablespoon butter and four tablespoon flour'in the top of a double boiler slowly to make a light golden roux. Add gradually, two quarts of half and half. Add onefourth teaspoon mace or nutmeg, one- fourth teas poo'n white pepper, one teaspoon salt, one teaspoon onion juice, one teaspoon Worcestershire, and one to two pounds of white, well picked crabmeat. Cook slowly for 20 minutes over the boiling water. Add one-fourth cup she-crab roe or crumbled
hard-boiled egg yolks. Stir Gently. Place one tablespoon dry sherry in each soup bowl, then warm them in the oven until time to serve. Garnish as above or put a dollop of whipped cream on top with finely chopped parsley for color.
Exhibition " Tomorrow RIO GRANDE - Climaxing the celebration of May as Older Americans' Month, the county Office on Aging will hold its annual Senior Citizens Juried Art Contest and Exhibition at the County Library tomorrow. The exhibit, which will include professional and non-professional categories, will be open to the public 10 a.m. -3 p.m. Winners of first, second, and third places in boihcategories will be eligible to enter the 1984 New Jersey Senior Citizens Annual Juried Art Contest and Exhibition at the Thomas A.
