Liven Up Menu For the Fourth
I By FLORENCE L.I). < HEAL I When we think of summertime we think of picnics and other outdoor eating pleasures Fourth of July has meant to most a , picnic of family and friends. Fried chicken or barbecued chicken or ham- | burgers, potato salad, deviled eggs, pickles, fruit and cookies are rather standard foods. Why not' add a few additions this year? CHEESE FILLED CELERY Blend together 8 oz. cream cheese and blue cheese, both softened, 'a cup snipped chives, 2 tablespoons dry sherry. ] and a dash of Worcestershire sauce. Wash the celery, dry to remove any extra water. Fill each stalk ( with the blended cheese , mixture. SCALLOP SERVtCHE y4 Cup lemon juic&fl use the concentrated diluted one-half with water ) \ y4 Cup lime juice\ (use B concentrates as with Iqmon juice) x/i teaspoon crushed and minced garlic white* paper to taste 2 pounds bay scallops (you can use sea scallops ) 2 fresh red peppers, seeded and chopped Combine the above ingre- . dients. Cover and chill for at least two hours. Add 1 pint seeded cherry tomatoes, 1 red onion chopped, 1 green peppier, chopped, and >4 cup minced fresh coriander. Combine all ingredients and cover and chill at least one hour. I mostly serve the seviche on Boston lettuce. RADISH SANDWICH Slice radishes thin. But- [ ter bread and spread the I radishes over the buttered [ bread. Put on the top layer I of bread. Different and delicious. T e radish sandwich makes a good tea sandwich also. LEMON BUTTER 3 lemons I pound sugar 4 eggs Butter (size of large egg ) Grate rind of I lemon. Add juice of 3 lemons, sugar and butter Put all in a pan, add well beaten egg yolks. Bring to a boil Remove from fire, add egg whites which have formed a peak Beat until the egg whites are mixed. Set to cool. FORGOTTEN COOKIES Set oven 375 degrees. Beat 2 egg whites and '4 teaspoon steam of tartar till stiff. Gradually add ::4 cup sugar. Continue to beat to make stiff meringue Beat in 1 teaspoon vanilla. Add 6 oz. package of chocolate chips. Drop by teaspoons on greased cookie sheets. Put sheets in oven and turn

Baby Parade Slated Aug. 16 WILDWOOD - The 74th annual Baby Parade will be held Aug. 16, it has been announced by the chamber of Commerce. Other events scheduled include the Mr. New Jersey Baby Building Contest July 21 ; the coronation of Queen Oceania, July 26. Conventions slated for September are the Shrine, Sept. 5-9; state firemen, 14-16, and state American Legion, 21-23.
