CAPE MAY - The Chalfonte. Hotel, will be among 64 country inns nationwide whose facilities and cuisine will be featured in a new soft-cover recipe book coming out in September. "America's Country Inn Cookbook." a 112-page spiral bound volume, is being published by The R.T. French Co.- of Rochester N.Y. House specialtito from ■each of the inns' kitchens have been adapted for home use by editors Marlene Cummins and Norinne Cole. THE 64 INNS selected to

Stylish pen and ink drawings illustrate each inn. From the Chalfonte comes this adapted version of Eggplant Casserole, a long-time favorite at the inn. The recipe for this uni- ; que dish features a medley of vegetables blended with cheese and bacon. Hot and hearty. Eggplant Casserole can be served as a side dish or for a nutritious lunch or " j supper. EGGPLANT CASSEROLE 3 medium-size eggplant, peeled and cut into 1-ihch cubes 3 medium-size onions, chopped 1 cup water 1 envelope French's Cheese Sauce Mix 1 cup milk 1 can (28-oz.) tomatoes, drained and cut into large pieces 3 slices bacon, cooked and crumbled 2 tablespoons French's Worcestershire Sauce 1 teaspoon salt V« teaspoon French's pepper 1 tablespoon butter or margarine, softened 4 cup dry bread crumbs 4 cup shredded sharp Cheddar cheese French's Paprika Simmer eggplant and onions in water until tender. Drain well. Prepare sauce jnix- -using milk; combine""" with eggplant. onions, tomatoes, bacons, Worcestershire sauce, salt and pepper Coat shallow 3-quart casserole with butter; sprinkle with half the crumbs. Spoon eggplant mixture into -casserole; sprinkle with cheese, remaining crumbs and paprika. Bake at 375 degrees until thoroughly heated and lightly browned. about 20 minutes. Makes 8 to 10 servings.
