Try Pear, Tomato Mincemeat Variations

My grandmother used to tell me how on the farm, at this time of the year, would be hog killing time and time to make sausage, scrapple and mincemeat. We think of mincemeat be:ig made out oT apples, but this year I tried two other types, pear and green tomato. PEAR MINCEMEAT 7 pounds pears, peeled and cut into eights 2 lemons, un peeled and cut into eights 2 oranges, un peeled and cut into eights 2 cups raisins 6 cups sugar 1 tablespoon salt 1 tablespoon ground allspice

Bring to a I boil; reduce heat and simmer, uncovered, 50 I minutes. Place in tightly covered jars (I put in I freezer some jars that I will not be using right away). Serve as a relish, use in a pie, or make cookies. Yeild 7Vi pints. I PEAR MINCEMEAT COOKIES cup shortening 1 cup sugar 2 eggs 2 teaspoons half and half 1 teaspoon vanilla extract 2Vz cups all purpose flour >2 teaspoon salt 1a teaspoon baking soda Ms cup prepared pear mincemeat 1 e g g y o 1 k (beaten) -optional 2 tablespoon water -optional melted oleo or butteroptional Cream shortening; gradually add sugar, beating well. Add eggs, one at a time, beating after each addition. Add half and . half and vanilla, beating well. Combine flour, salt, and baking soda. Add to creamed mixture, stirring well. Cover and chill for at least one hour. Roll dough to Mrinch thinkness on a lightly floured surface. Cut with two-inch round cookie cutter. Place half the cookie on a greased cookie sheet, spoon one teaspoon mincemeat onto center of each. Top with remaining cookie. Press edges together with a fork. Combine egg yolk in water; brush top of cookie with egg yolk mixture or melted butter. Bake at 350 F. for 12-15 minutes. Yield four doz. PEAR MINCEMEAT PIE When using pear mincemeat for a pie add to two Cups prepared pear mincemeat V4 cup firmly packed brown sugar, two tablespoons all purpose flour and Ms cup chopped pecans. GREEN TOMATO MINCEMEAT 3 pints chopped apples 3 pints chopped green tomatoes 4 cups brown sugar 1V5 cups vinegar l teaspoon cloves V< teaspoon allspice teaspoon mace lh teaspoon pepper 3 cups raisins 3 teaspoon cinnamon

2 teaspoon salt A* cup butter or oleo Mix apples and tomatoes. Add remianing ingredients, except butter. Turn into glass jars as soon as made. Keeps well in refrigerator or freezer. QUICK MINCEMEAT 1 cup chopped apples \z cup seeded raisins, chopped Vz cup currants y« cup butter 1 tablespoon molasses 1 tablespoon boiled cider 1 cup sugar 1 teaspoon cinamon Vz teaspoons ground cloves 1 teaspoon nutmeg % teaspoon mace 1 teaspoon salt Stock to moisten 1 cup chopped, cooked meat* 2 tablespoon fruit jelly Mix ingredients, except mept and jelly, and simmer one hour. Add mA and jelly. Cook, 15 minutS. * Note- 1 use pork as my meat. MOCK MINCEMEAT 4 tablespoons cracker crumbs IV2CUP sugar 1 cup molasses Vz cup lemon juice or vinegar 1 cup seedless raisons, chopped Vi cup butter 2 eggs, well beaten Spices Mix ingredients in order given, adding spices to taste.
