Open House Buffet

Following are some recipes I have used at Holiday Buffets. CREAM CHEESE PUFFS 1 (3 oz.) pkg. cream cheese, softened 1 teaspoon miriced onion 1 (2 oz.) pkg. can sliced mushroom, drained and chooped 2 drops hot sauce 1 (8 oz) can refrigerated crescent dinner rolls Vz cup chopped pecans.

Combine first five ingredients; mix well, Unroll crescent rolls; leave every two attached, forming four rectangles, Spread each rectangle with one-fourth of mushroom mixture, carefully spreading to the edge; beginning with the long side, roll up each rectangle jellyroll fashion; slice each roll into six pieces. Coat with pea cans, pressing the pecans into dough ; place on ungreased baking sheets. Bake at 375 F. for 30 minutes or until golden. Yield 2 doz. HAM ROLLS 6 cups ground cooked Ham 3/4 cup regular oats, uncooked 2 eggs, slightly beaten 1 tablespoon brown sugar 1/8 teaspoon ground* cloves -i vegetable oil 13-20 whole cloves 1/3 cup firmly packed brown sugar 2 tablespoon cornstarch 1 cup cold water 2 cups pineapple juice V* cup lemon juice Combine first five ingredients, mixing well. Shape into one-inch balls. Fry in small amount of vegetable oil over medium heat until brown. Drain on paper towels. Tie whole cloves in cheesecloth and set aside. Combine "6 cup brown sugar and cornstarch in large saucepan. Gradually add water, stirring until smooth. Add pineapple and lemon juice, cook, stirring 7 constantly, until smooth 1 and thickened. Add meatballs and whole cloves; simmer over low heat 30 minutes, stirring occasionally. Remove cheesecloth bag. Yield about 4Mj doz. ~ FRENCH FRIED MUSHROOMS 1 egg Vz cup milk 1/3 cup all purpose flour l/2 teaspoon salt 20 medium ..sized fresh ' mushrooms

1 cup cornflake crumbs vegetable oil seasoned salt Combine egg and milk, beating well. Stir together flour and salt. Dredge mushroom mixture; roll in cornflake crumbs. Deep fry in hot oil (375 F.) until golden brown. Drain on paper towels and sprinkle salt. PEPPER RELISH 1 quart vinegar 12 green peppers, seeded 12 red pappers, seeded 15 large onions 2 cups sugar 2 tablespoons salt Put peppers and onions through chopper. Pour on boiling water and drain. Bring vinegar, salt, and sugar to boil, add to chopped mixture, and boil one mirrnte. Cool ^food served over cream cheese. POINSETTIA SALAD Cut small, firm tomatoes in eighths without serving sections. Open to represent petals of flower. Twist some sections so that they lie on their sides. Put spoonful of mayonnaise in center. Garnish with circle of finely diced pimento on mayonnaise. SPINACH SALAD BOWL Place in blender: l medium diced onion, 1 hard cooked egg, 1 teaspoon salt, 2 tablespoon white vinegar, and 2/3 cup mayonnaise. Blend until smooth. Wash fresh spinach thoroughly. Place in refrigerator until ready to serve. Toss with dressing. SHRIMP MOLD 3 cans tiny shrimp, rinsed and drained 1 onion, minced 1 can undiluted tomato soup 9 oz. cream cheese iy> envelope unflavored gelatin 2 stalks celery , minced 2 oz. mayonnaise Heat soup, sprinkle gelatin over soup to dissolve. til smooth and add remaining ingredients. Pour into lVfc-quart mold. Chill until firm. STRAWBERRY SALAD MOLD 3 (3 oz.) pkg. strawberry jello 2 pkg. (10 oz.) frozen strawberries 2 bananas, crushed 2Yn cups boiling water 1 can crushed pineapple 2 cups sour cream Dissolve jello in boiling water. Add frozen strawberries and stir until mixture begins to thicken. Add undrained pineapple and crushed bananas. Mix thoroughly. Pour mixture in a 9 x 13 inch pan. Allow to set until firm. Spread the sour cream and pour on remaining mixture. Set until firm and cut into squares to serve. I will continue with ray Open House Buffet ideas next week. Florence L.D. Official dropoff points for donations are: Marine National Bank, all branch offices; Sports 'n Stuff, Cape May, and WCMCWNBR, Wildwood. Anyone wishing to give new or used toys in good condition can leave them at any of the cooperating businesses during normal business hours. AREA businesses and service groups are joining in the toy patrol. Stalier's Hardware of Wildwood and the Wildwood Area Kiwanis are donating Christmas gift wrap for the toys and the Wildwood Crest Police Department has volunteered to help deliver the toys. The toy patrol, a countywide, all -volunteer effort to collect Christmas toys for needy families, is directed by Gary Saunders, WCMC announcer. Volunteers can cpntact Saunders at 522-1416.
