Make Tradition Tasty Tips on Easter

HEAL When we think of Easter food we think of the Easter ham and the Easter egg Perhaps a few hints about cooking hams are in order Tenderized hams should bake 4 hours at 300 degrees uncovered. Ready-to-eat hams should bake two hours at 300 uncovered. Varying the juices or the "baste" you use makes baked hams interesting For a 5-6 pound ham: l cup maple syrup or 1 cup barbecue sauce or 1/2 cup fruit juice plus 1/2 cup Karo or honey or 1/2 cup Karo, plus 1/2 cup bourbon or 1 cup gingerale or Juice 1 orange. 1/4 cup pineapple juice, and 1/2 cup Karo. plus 1/4 cup brown sugar or 1/2 cup beer and sprinkle with brown sugar or last half hour spread over the ham 1/2 cup orange marmalade. chutney or jelly and bake BAKED HAM STEAK 1 slice ham 11/2 pound cut 1 inch thick 1 cup pineapple juice 1 teaspoon whole cloves 1/4 teaspoon dry mustard 1/2 cup sour cream Broil steak under direct heat for 10 minutes Boil pineapple juice with cloves and mustard until reduced by half Cool. Fold in the sour cream, stiffly whip ped spread over ham slice and bake at 350 until cream is partially cooked into the ham
STUFFED HAM ROLLS 6 slices ham, cut thin 1 cup cooked wild rice 1/2 cup salted peanuts 1/2 cup slivered chicken (optional) 2 cups cream mushroom sauce (diluted mushroom soup) Mix rice and peanuts and chicken if used and place about three tablespoonfuls on center of each slice of ham. Roll up carefully and place in a shallow buttered baking dish. Cover with mushroom sauce and bake at 325 until brown and bubbly. HAM LOAF 2 eggs 4 cups ground ham 1 teaspoon baking powder 1 teaspoon Worchestershire sauce 1 cup breadcrumbs 1 cup light cream Beat eggs, add ham. and rest of ingredients: mix thoroughly Butter a 2-quart loaf pan and line with wax paper Fill the loaf pan and spread with 1/2 cup brown sugar 1 teaspoon flour 1 teaspoon prepared mustard Vinegar enough to moisten Bake at 375 for about 1 hour MINCED HAM SQUARE WITH HORSERADISH SAUCE 4 cups ground uncooked smoked ham 2 eggs, slightly beaten 3 cups soft breadcrumbs 1 1/4 cup buttermilk 2 tablespoons brown sugar 2 tablespoons prepared horseradish Mix ingredients well Pack into a greased baking pan -and bake at 350 about 14 hours, increasing heat for the last 15 minutes to 400 for a crusty brown top. Serve with a sauce made of fluffy whipped cream with a pinch of salt and as much well drained horseradish as your taste dictates This recipe is very versatile - it can be frozen. It can be made into tiny marble sized balls, baked 15 minutes in a 350 oven and served with the sauce as an hors d'oeuvre. Two desserts I often serve with ham are as follows: GRAHAM CRACKER PUDDING 1/3 cup butter or oleo 1 cup sugar 2 egg yolks, well beaten 2 egg whites, softly beaten l No. 2 can crushed pineapple 4 pound crushed graham crackers 4 cup crushed pecans Cream bufrer and sugar. Add egg yolks, pineapple and chipped nuts Add about 3/4 of the cracker crumbs to mixture Lastly add egg whites. Cover bottom of pie pan with the rest of the crumbs.
