A Chowder Using Fish Leftovers

(Soups from the sea. prepared simply for dining delights). A fish chowder that's a » little different, something that will feature several types of fish, and something to use left-over cooked fish with. That's all the lady wants. We can give it to her. As she dines on the perfection of vacation restaurants, she mulls over the things she would like to do at home in the way of fishery cooking when the vacation's over. A meal in a bowl with a side of salad and bread is our suggestion, so the lady's on her way with: CAPE CHOWDER Vt cup diced oysters and, their liquor 1 cup small peeled raw shrimp H stick of butter 1 qrt. milk I can water chestnuts, thinly sliced with juice I can whole kernel corn and

its liquid ~ I cup cooked While potatoes, diced, and the cooking water l'/2 cups cooked fish, diced (leftover baked fish is fine) saltind pepper to taste parsley for garnish Saute the oysters and shrimp In the butter three to four minutes. Turn heat to low and add one quart milk. Add the crab, chestnuts, corn, spuds, cooked fish and seasonings and cook very slowly for 10 minutes. Stir occasionally. Add one pint of half and half and heat another minute, stirirng carefully (too much heat will curdle the soup). , This chowder can be frozen if you omit the potatoes until serving time Add or omit seafoods as they are available. Serve with some hot cornbread. an oil and vinegar topped salad and chocolate cake. Take vacation home.
