Delicious Combination Rhubarb, Strawberry Time
By FLORENCE L.D. HEAL Rhubarb time is here and combined with strawberries it is delicious in pies, as a fruit dish or as a sauce. The following recipe for a sauce which might be served over cake or ice cream. RHUBARBSTRAWBERRY SAUCE 3 cups - 1" pieces fresh rhubarb 1 cup sugar l cup halved fresh strawberries 1 tablespoon cornstarch 2 T. water Combine rhubarb, sugar, and 1/2 cup water in saucepan; bring to biol. Reduce heat, cover and simmer 5 minutes. Add strawberries, cook until strawberries are tender. 2-3 minutes. Blend together cornstarch and water. Add to rhubarb-strawberry mixture. Cook, stirring constantly, until mixture
thickens and boils; remove from heat. Chill in refrigerator until serving time. RHUBARBSTRAWBERRY JAM 1 pound strawberries 1 pound rhubarb, cut in 1" pieces 2 pounds sugar Cover the rhubarb with 2 cups sugar and allow it to stand an hour to extract the juice. Crush the strawberries, mix with the remaining sugar, and combine with rhubarb. Heat slowly until the sugar is dissolved, stirring meanwhile. Continue the stirring while
boiling 15-20 minutes or until the jam is somewhat thick. Put in glass jars and store in freezer or refrigerator for not more than six months. RHUBARB STRAWBERRY BETTY 1 cup sugar 1/1 teaspoon cinnamon i 1/4 teaspoon nutmeg ! 1/4 teaspoon salt 1-1/2 cup soft break crumbs 2 cups rhubarb, cut into 1" pieces l cup strawberries, sliced 1/4 cup water juicftand rind of 1 lemon 3 tablespoons butter Grease 1-1/2 quart I casserole. Pour in 1/3 of the > crumbs, then half of ; rhubarb and strawberries. Sprinkle half the sugar mixture. Repeat. Mix ; water, lemon juice and r rind; pour over. Put on remaining crumbs and dot with butter. Cover and ; bake in moderate oven 350 degree 1-1/4 hours, serves six. RHUBARB STRAWBERRIES COBBLER 1-1/2 cup rhubarh - 1" pieces 1 cup strawberries, sliced 2 tablespoons granulated tapioca 3/4 cup sugar 1/4 teaspoon salt , 1/4 teaspoon cinnamon Dash of nutmeg 1 tablespoon butter Baking powder biscuit dough Put the strawberries and rhubarb into a shallow bak ing dish. Add tapioca and let stand for 10 minutes. Add sugar, salt, and spice. Mix well. Dot top with butter. Roll biscuit dough to a thickness of 1/4 inch. Prick and arrange over top of the mixture.
