From Old Recipe Collection Delicacies Out of the Past

By FLORENCE L.I). HEAL Recently May McLaughlin brought me a box of recipes her mother. Mrs Thomas Monte, had collected over the years. I had a lot of fun reading them and trying them out on my family, so I decided to share some with you ANGLE COCOROONS Spread four tablespoons of soft butter or oleo evenly on the bottom and sides of 12 muffin tins allowing one teaspoon for each cup. Press one 4-oz package of shredded coconut in the bottom and sides of the muffin tins. Prepare one package of angel food cake mix according to directions on the package.. Fill the cups N full. Bake in oven 375 degrees F 15-20 minutes or until cake is done Cool slightly Loosen from the cups and finish cooling on rack The rest of the batter may be baked in a loaf pan. I served crushed fresh strawberries over the loaf and the cocoroons. The cocoroons were delicious plain. The following recipe was taken from May 1952 ladies Home Journal: ALMOND C HICK K N CROQUETTES Make two cups thick cream sauce with six Tablespoons of flour, six tablespoons butter or oleo. two cups milk, two teaspoons salt and a little pepper Season with '4 cup finely chopped onion. Mix in three cups of finely chopped cold chicken Chill several hours Shape into 8 croquettes, enclosing a cube of can ned cranberry sauce (jellied) in center of each To two cups cracker crumbs add one cup chopped or ground almonds. Mix well Roll the croquettes into the crumbs, then in beaten egg. then in crumbs again Fry in deep fat at 375 degrees until golden brown. Serve hot with rice and curry sauce CURRY SAUCE Melt cup butter or oleo. I /3 cup of finely chopped apples. 1/3 cup finely chopped onion Cook over low heat until tender Mix in '4 cup of flour and stir until smooth Add 2' 4 cup chicken stock and 1 cup light cream Add thin lemon peel strip, 1 teaspoon salt and 1 tablespoon curry powder mixed with 2 tablespoons cold water. Cook until thick, stirring constantly Remove lemon peel. Serve hot over croquettes. Medieval Faire Ahead SWAINTON - Cape May Care Center will host a Renaissance Faire noon-4 p.m. Saturday. June 22. BROCCOLI WITH LEMON DRESSING Mix 'a cup lemon juice. >4 cup salad oil, I* teaspoon paprika, 1 teaspoon sugar. 4 teaspoon salt. 1 clove garlic, curshed, and 1 tablespoon finely chopped t onion. Blend together for at least 2 hours. Shake well. Pour over hot cooked broccoli ( 1 1 j bunch fresh) Sprinkle the broccoli with hard cooked eggs chopped. PEANUT BUTTER MUFFINS Cream 2 tablespoons of peanut butter with 2 tablespoons shortening. Add '4

cup sugar and cream well together. Sift 2 cups flour with teaspoon salt and 3 teaspoons baking powder. Add alternately to peanut butter mixture with 1 cup milk. Mix just enough to moisten the dry ingredients. Fill muffin tins 2/3 full Bake 400 degrees F 25 minutes. P.S.
