Traditional, Versatile Humble, Handy Puddings

HEAL Puddings may not quite reach the popularity rating traditionally accorded apple pie, but they have been among the favorite afterdinner treats in American households since colonial times. Most can be served either hot or cold, making them a natural for summer menues. Here are some recipes, including such standbys as bread pudding and rice pudding: MILK PUDDINGS BUTTERSCOTCH BREAD PUDDINGS 3 tablespoons oleo 4 cup brown sugar > 4 teaspoon baking soda 2 cups milk Pinch of salt 2 cups stale bread cubes 2 eggs Melt the butter in pan. Add sugar; heat until well k blended. Dissolve soda in # milk; add gradually to sugar mixture. Stir until well blended; set aside to cool. Beat eggs lightly. Add salt and cooled milk-sugar mixture. Put bread cubes into greased baking dish; pour custard over. Bake in preheated 350° oven about 45 minutes. Yield, five servings. Lemon Graham Pudding 1 cup graham cracker crumbs 3 egg yolks 1 can Eagle Brand sweetened condensed milk 4 cup lemon juice 3 egg whites Line pudding dish with graham cracker crumbs. In a bowl put condensed sweetened milk. lemon

juice, three egg yolks beaten slightly. Mix well. Spoon half the mixture into the pudding dish. Sprinkle a layer of graham cracker crumbs over the pudding. Spoon in remainder of the pudding mixture over the graham cracker crumbs. Beat egg whites until stiff. Add two tablespoons sugar. Beat until peaks form again. Rut the meringue over the pudding. Bake in 400 degree oven until lightly browned. COCONUT CREAM PUDDING 3 tablespoons cornstarch 4 cup sugar 4 teaspoon salt 2 cups milk 1 2 egg yolks, beaten

2 tablespoons oleo or butter 1 teaspoon vanilla 4 cup shredded or flaked cocnut Whipped topping (optional) Mix cornstarch, sugar, and salt in heavy saucepan. Gradually blend in milk; stir over moderate heat about seven minutes, until mixture thickens. Stir a little hot mixture. Cook one minute, stirring constantly. Mix in vanilla and coconut.
