When Vines Are Bountiful Squash Has Many Guises

By Florence L.D. Heal If you were married to a home gardener, as I am, each day you would be picking squash and wondering what way you could prepare it for your family that day. The following recipes I have prepared so far this season for my family with yellow squash. 'Little Miss' Test On July 29 SEA ISLE CITY - The tenth Annual "Little Miss Sea Isle City" Pageant will be held Monday evening, July 29. at the Civic Center, Townsends Inlet. Girls 5 to 11 are eligible to compete for trophie and the "crown". Eligible to enter the contest are year-round and summer residents of Sea Isle City, and residents of campgrounds immediately adjacent to the city. The entrants must wear long gowns or party dresses, and should apply before July 26. Applications are available at Sea Isle City Hall, 4416 Landis Ave. PAULINE TAYLOR is once again serving as pageant director and has promised another great show. Dick Alliger of WWOC's "Make Believe Ballroom" program will be on hand to help interview contestants Ms. Taylor stated that contestants will be judged primarily on personality and appearance, and will be asked questions, in order that Judges will be able to hear them speak. CARROT-SQUASH CASSEROLE 7 cups sliced yellow squash cup chopped onion 1 can cream of chicken soup l cup dairy sour cream 1 cup shredded carrots 2 cups herb season stuff ing mix V4 cup melted butter Cook squash and onion in salted water for 5 minutes, drain. Combine soup, sour cream and carrots. Fold in drained vegetables. Combine stuffing and butter. Sprinkle half of the stuffing mixture in a 12x7x2 inch baking dish. Spoon vegetable mixture on top. Sprinkle rest of stuffing mixture around edges of dish. Bake at 350 degrees for 30 minutes, uncovered. Serves 6-8. SQUASH WITH TOMATOES 1 squash (about 2 pounds) pared and 2 tablespoons butter 1 cup chopped onion 2 tomatoes, quartered xh teaspoon salt teaspoon sugar Va teaspoon dried savory ' M» teaspoon black pepper In skillet saute butter and onion. Add tomatoes and cook over low heat for 5 minutes. Add squash and seasonings. Cover and cook 10 minutes or until squash is tender. Serves 6. BAKED SQUASH 2 cups sliced yellow squash (peeled) 1 small onion, diced V4 cup saltine crackers, crushed 4 cup cream 2 tablespoons butter Cook sliced and peel squash in salted water until done. Drain and mash. Saute onion in butter, add cream, crackers and squash. Pour into greased casserole and top with butter dots and a few bread crumbs. Bake at 400 degrees until firm, about 30 minutes. Serves 6-8.

SQUASH CROQUETTES 2 cups finely chopped yellow squash 1 cup finely chopped onion 1 egg beaten 1 teaspoon salt 1 teaspoon pepper 4 cup plus 1 tablespoon flour Hot oil Combine first five ingredients; mix well. Stir in flour. Drop by tablespoons into inch hot oil. Cook until brown, turning once; drain. Yield, 6 servings. Florence L.D. Convention Hall Hosts Crafters WILDWOOD - Once again the Wildwood Convention Hall will hold inside its doors the creative talents of crafters from the Tri-State area and from around the world, 5-11 p.m. Friday and 10 a.m.- 11 p.m. Saturday, July 27. There will be authentic American Indian jewelry from New Mexico. A Doylestown, Pa. man also crafts silver and gold into works of art. From overseas. Wooden nutcrackers from Germany. . Each piece is hand carved / and painted. ' Jeannette Ziemba, from Manahawkin, presents dolls from ail nations. Each dress is an authentic costume. THE VETERAN of the show, Nancy Wagner, will again put dolls in the latest styles.. Barbie and Ken will have a complete collection of 1985-86 designs. She also has a complete line for Cabbage Patch Dolls Another veteran is Anne's Ceramics. She has porcelain dolls. Hope Heldreth from Somers Point, started out doing doll clothes. Now she specializes in pre-term and newborn clothes. ALSO, A new talent is Chery English. Her oil paintings are done on hoops, canvas, wood, and saw blades. She travels from Elmer, N.J. Gary O'Denbrett travels from Woodbury. He has taken stained glass, added pressed flowers and come i up with beauty.
