HERE'S A delightful recipe for ChocolateDipped Oatmeal Lace Cookies: 1 large egg, beaten lightly, cup firmly packed light brown sugar, >/4 cup granulated sugar. 1 cup old-fashioned rolled oats, V* teaspoon salt. y« tsp. almond extract, l tablespoon unsalted butter, melted and cooled. 4 ounces semi-sweet chocolate, chopped coarse. In a bowl with an electric mixer, beat the egg with the brown sugar and the granulated sugar until the mixture is thick and pale. Add the oats, salt, almond extract and butter and stir until well mixed. Drop the batter by rounded teaspoons three inches apart onto baking sheets lined with^buttered foil and flatten ejJch mound with the back o^a fork dipped in water. Bake cookies in the middle of a preheated 325 degree oven for seven minutes or until golden . around the edges. Let the cookies cool on baking sheets and peel them off the foil gently. Melt chocolate in top of a double boiler set over barely simmering water. Holding each cookie by the edge, dip into chocolate to coat half. Put cookies on racks while chocolate hardens. These cookies are truly extraordinary — make them now and put into tins for holidays.
