Keeping the Doctor Away? Recipes for Versatile Apple
Bv FLORENCE L.D. HEAL When I think of Halloween I think of witches, ghosts, pumpkins, and apples. Perhaps this is because candied apples were part of my Trick and Treat collections when I was a youngster. In the 1560s in Devonshire. England, the saying arose. "ATE an apfel avore gwain to bed makes the doctor beg his bread". And today we claim, with substantial evidence to support it, that "An apple a day keeps the doctor away". Another piece of history that 1 think interesting is that the first commercial apple tree nursery was established in Flushing. L.I.. in 1730. Oliver Cromwell, a fanatical Puritan, banned all apple pies in England in the mid- 1600s because they gave pleasure to people and therefore, he reasoned, they must be wicked! Last year I gave you my recipe for my apple pie. This year I tried a recipe sent to me by the New Jersey Appple IndustryCouncil which I enjoyed and will share with you. APPLE-NUT PIE 6 medium apples < Rome. Stayman or Mcintosh) 1 cup chopped dried roasted peanuts 9" unbaked pie shell 1 cup firmly packed brown sugar *4 cup graham cracker crumbs 4 cup unsifted allpurpose flour 1 teaspoon cinnamon >4 teaspoon nutmeg >4 teaspoon salt 4 cup butter or oleo. melted Pare and core apples; slice thin: mix with chopped peanuts. Arrange in pie shell. Combine remaining ingredients, except butter, mix well. Spread over apples. Spoon butter carefully over top. Bake at 375° F. about 45 minutes or until apples are tender and rim of crust golden brown. We think of ginger cookies and gingerbread at this time of the year also. Here is a recipe adding apples to your gingerbread recipe. 1 2 cup chopped nuts 1 pkg. (144 oz> ginger bread mix or your own recipe. Line bottom of a 9-inch square pan with waxed paper In the bottom of the pan. layer apple slices, overlapping slightly in three or four rows. Melt butter in small saucepan. Remove from heat and stir in sugar, flour, cinnamon and nuts, mixing well. Sprinkle over apples Prepare gingerbread according to package directions of your recipe. Pour over apple layer and bake at 350° F. for 40 to 45 minutes. Let cool in pan. or on rack for 10 minutes. Turn out on platter.
