Holiday Treats ' Jersey Fresh ' Recipes

Bv FLORENCE L.D. HEAL For the past year the New Jersey State Department of Agriculture has had a promotional campaign celled "Jersey Fresh". Recently I received a folder containing some recipes that 1 will share J with yon. I was pleasantly surprised when I prepared and tasted some of the J goodies. I hope you will be also. Jersey Fresh Pumpkin Soup 1 tablespoon butter '2 cup chopped onions 2 teaspoons ginger 3 cups broth (vegetable or chicken > ) Garnish: cup plain yogurt, 't cup chopped fresh parsley 2 cups fresh pumpkin ( pureed ) 1 cup milk '4 teaspoon nutmeg Salt and pepper to taste Heat butter in a heavy saucepan and saute onion and ginger over medium heat until onion is soft. Add broth and bring to a boil. Stir pureed pumpkin into broth. Simmer for a few minutes before adding milk and nutmeg. Do Not Boil. Add salt & pepper to ( taste. Garnish each serving with a dollop of yogurt and a sprinkle of fresh parsley. I NOTE: I used the ' chicken broth and cheated by using frozen pumpkin. You could use canned. Jersey Fresh Christmas Cake 4 eggs ■2 cup oil 134 cup sugar 2 cups flour 2 teaspoon baking powder 2 teaspoon ground cinnamon '■2 cup chopped nuts 'jC crushed pineapple 1 apple (peeled and

grated ) 2 carrots i peeled and 1 grated) «2 cup cranberries, i chopped 1 teaspoon orange rind > Beat eggs and oil together , add sugar, stir in flour, baking powder, cinnamon. and pineapple. Mix well. Add the orange rind, cranberries, carrots, apples. and nuts. Mix well. Pour into a greased and floured 10" bundt pan. Bake at 350° for 55 minutes. Cool 15 minutes. Turn out of pan. Drizzle with orange glaze Orange Glaze Grate 1 teaspoon rind from a fresh orange. Combine rind. 2 cups powdered I sugar and 3 tablespoons orange juice until well mixed. Drizzle over cake. Cranberry Pecan Pie Pastry for single crust pie 3 eggs I *3 cup sugar I Dash of salt

1 cup dark corn syrup '*> cup butter, melted 1 cup pecans 1 cup coarsely chopped cranberries Prepare and roll out pastry. Line 9" pie plate. Trim pastry to '2" beyond edge of pie plate. Flute pie rim. In a mixing bowl beat eggs slightly, stir in sugar, salt, corn syrup and melted butter. Mix well. Stir in pecans and cranberries. Place pie shell on oven rack. Pour filling into pie shell. To prevent overbrowning, cover edge of pie crust with foil. Bake at 325° oven for 25 minutes. Remove foil and bake another 50 minutes more or until knife inserted offcenter comes out clean. Cool thoroughly. I tried this Jersey Fresh Tomato thumbprint. I Ms a common thumbprint recipe but the use of the tomato preserve made the cookie attractive and gave a little tartness to the tase of the cookie. PTA Hails Bazaar as Success VILLAS - St. Raymond's Seventh Annual Christmas Bazaar held last month, was another successful event. This P.T.A.sponsored bazaar was attended by hundreds of county residents, and many who traveled from other parts of the state. This year the bazaar included crafts, baked goods, funnel cakes, games of chance, children's crafts, jewelry and gift items, home-cooked meals, and a baby-sitting service. Jersey Fresh Tomato Thumbprint 1 cup flour •'4 cup packed brown sugar >2 cup oleo or butter J2 teaspoon vanilla 1 egg, separated 1 cup chopped walnuts •2 cup tomato preserve or jelly Preheat oven to 350°. Into a bowl, measure flour, brown sugar, butter or oleo, vanilla and egg yolk. With a mixer beat at low speed until well blended. Increase speed to medium and beat one minute. With hands shape dough into balls. In a cup, beat egg white with a fork until foamy. Place chopped nuts on piece of waxed paper. Dip balls into egg white, then into nuts. On two ungreased cookie sheets, place balls one inch apart. Press thumb in center of each ball to make a '2" indention. Bake cookies 15 minutes. Remove from sheet. Spoon some preserve or jelly in the center of cookie. Makes 2' 2 dozen. Another of the recipes was sweet potato nut bread. A little moister than some. The recipe can be made into muffins also. , Sweet Potato Nut Bread !> 4 cup butter or oleo 2 cups sugar 3' 2 cups sifted flour 2 cups cold mashed sweet potatoes 1 cup walnuts, finely chopped 2 teaspoons baking soda % cup strong black coffee >2 cup shortening 4 eggs 4 teaspoon salt 1 teaspoon cinnamon 1«2 teaspoon nutmeg Cream shortenings and sugar until light. Add eggs, one at a time, mixing well after each addition. Blend in sweet potatoes. Sift together the dry ingredients; add nuts. Stir into the creamed mixture alternately with cold coffee. Pour batter into two greased 9"x5"x3" loaf pans. Bake at 375° for one hour or until they test done in the center. Cool 10 minutes. Remove from pans and cool completely. Have a happy holiday.
