By FLORENCE L.D. HEAL What could be finer than the Jersey strawberry? I like to eat them as I pick them, dirt and all. It is safer and better to wash before eating. Don't wash them too far ahead of when you plan to use them, and drain them well. CRUNCHY STRAWBERRY PIE hi cup butter V« cup brown sugar 1 cup flour 4 cup chopped walnuts Crust: Mix together ingredients for crust. Bake in oven for 400 degrees F. for 15 minutes. Save 3/4 cup for topping. Chill. Filling: 2 cups strawberries sliced 1 pint heavy cream Slice strawberries. Place into a chilled bowl with heavy cream. Beat with electric beater until stiff. Pile into crust and chill. A shortcake I make for strawberry shortcake is as follows: STRAWBERRY SHORTCAKE 4 eggs 1 cup sugar 4 cup flour 14 teaspoon baking powder *3 teaspoon vinegar *3 teaspoon vanilla It* tablespoon cold water Beat egg whites very stiff in a bowl ; drop egg yolks in whites gradually. Add vinegar, vanilla, water, flour and baking powder. |
Bake in 375 degrees F. oven. Split and fill when cooled with fresh sliced strawberries. Place whole strawberries and whipped cream on top. I was asked to repeat the following recipe: STRAWBERRY SHERBERT 1 quart strawberries 2 cups granulated sugar Juice of l lemon 3/4 cup water Mix strawberries, sugar and lemon and let stand 1 hour. Add water and crush through colander. Freeze. If you are trying to use up the strawberries you froze last year to make room for this year's supply or want to use already prepared strawberries, the following recipes might fit the bill. STRAWBERRY PRETZEL DESSERT 2 cups crushed pretzels 3 tablespoons sugar 3/4 cup melted margarine
Mix together and press into a 9 x 13 inch pan. Bake 7 minutes at 400 degrees. Cool hi hour. 8 oz. package cream cheese \ 1 cup sugar J 1 large container of Cool Whip (9-12 oz) Cream together cheese and sugar. Fold in Cool Whip. Pour into baked crust. Refrigerate. 1 large package of strawberry Jello 2 cups boiling water 1 small can crushed pineapple 1 (16 oz) pkg frozen strawberries with syrup Dissolve jello in boiling water. Mix in frozen strawberries and pineapple. Chill until thickened. Pour over cream cheese mixture. Refrigerate. STRAWBERRY SUPREME 1 package frozen strawberries 1 (4 pt) sour cream hi eup sugar 1 tablespoon lemon juice V\ teaspoon almond flavoring Defrost and mash strawberries. ( I have used fresh strawberries). Blend in sour cream and sugar. Add lemon juice and almond flavoring. Pour mix* ture into a freezing tray. When the mixture begins to get a little firm, stir and return to tray. Put in freezer. Mixture freezes in about 2 hours. Florence L.D.
