Kettle of Fish Oyster Soup Done Polynesian

' Soup with a difference is the subject today. Done the Polynesian way, this soup includes oysters to blend with the subtle flavor of green peas and cream. To be especially fancy with this fine combination, a dollop of whipped cream can be laid gently on the top of each filled soup plate just before serving and slid under the broiler until it is lightly browned. The soup itself is wellknown on the West Coast and is so good, it simply i had to be added to the food of Polynesia as served here in the East. Social Security Qu«*N|Hjm .ind An\i\i-r\ Q. POLYNESIAN OYSTER SOUP 1 package frozen green peas, pureed 1 tbsp. butter 1 tbsp. flour 1 tsp. salt y4 tsp. white pepper 1 cup milk I cup fresh oysters, pureed or minced in their juice Vi cup heavy whipping cream Cook peas as directed on the package. Drain them and put them through the

sieve, or the blender, to puree them. Melt the butter in a heavy saucepan. Blend in the flour, salt and pepper. Cook over low heat, stirring until the mixture is smooth. Stir in the milk, the peas and the finely minced oysters. Bring to a boil and boil for one minute, stirring constantly. Remove from the heat. Stir in the cream and heat to just simmer. Do no< boil. Serves four.
