Hurry: Season Is Short Ways of Enjoying Rhubarb
By Florence L.D. Heal This year the rhubarb crop has not been as good as other years. Weather has a lot to do with the size of the rhubarb stalk. Rhubarb likes a little wetter weather than we have had this year. The season for fresh rhubarb is short, so enjoy it as long as it is available. Some of the ways I use rhubarb are as follows: Golden Raisin Rhubarb Pie Pastry for 2-crust 9" pie 6 tablespoons flour 1V4 cups sugar, divided 3 cups rhubarb cut in 1" pieces 1 cup golden raisins 2 tablespoons butter or oleo Line 9-inch pie plate with pastry. Brush with melted butter; chill. Combine 2
tablespoons of the measured flour and sugar (each), sprinkle over the chilled pastry. Combine rhubarb and raisins; pour into pie pan. Combine the remaining flour and sugar; sprinkle over the rhubarb mixture. Dot with butter or oleo. Cut remaining pastry into strips for lattice topping. Bake at 450 degrees for 15 minutes. Lower temperature to 350 degrees, bake for 40-45 minutes longer. Rhubarb Sherbert 4 cups cubed raw rhubarb 1 cup water 1 cup sugar 1 cup water (additional) Va cup orange juice y* cup pineapple juice 2 tablespoons lemon juice 2 egg whites '/a cup white corn syrup Cook the rhubarb with 1 cup water until tender. Boil l cup sugar and 1 cup water together for 5 minutes. Add corn syrup and chill. Combine the fruits and add to chilled syrup. Freeze until firm. Remove from freezing tray to a chilled bowl, add the unbeaten egg whites and beat until fluffy. Return to freezer tray and freeze until firm. Rhubarb Jelly 5 cups fresh rhubarb, cut in small pieces 5 cups sguar 16-oz. can crushed pineapple, drained Two 3-oz. boxes strawberry Jello Put first three ingre-
dients on to boil for 20 minutes. Remove from heat. Add Jello to mixture and stir. Put in either sterilized jars or airtight container in refrigerator. Rhubarb Surprise Cover bottom of casserole with rhubarb. Sprinkle generously with sugar, then buttered bread crumbs. Add alternately in layers to top of dish, finishing with crumbs. Dot generously with butter. Bake 15 minutes 350 degrees. Serve with whipped cream. Meringue Rhubarb Pie Boiling water 3 cups rhubarb 3 egg yolks 1 cup sguar 2 tablespoons flour Va teaspoon salt Pour boiling water over rhubarb and drain. Beat egg yolks, sugar and flour and salt. Add rhubarb and mix. Meringue 4 teaspoon lemon juice 3 egg whites 6 tablespoons sugar Add lemon juice to egg whites and beat until stiff. Add sugar and beat. Fill the pie shell (unbaked) with the rhubarb mixture. Bake the rhubarb-filled pie shell at 350 degrees for 40 minutes. Remove from oven, cool slightly, spread meringue over pie. Return the pie to the oven. Bake at 450 degrees for 5 minutes. (ED. NOTE: Florence L.D. Heal is a former supervisor of home economics of the State of New Jersey).

Antique, Craft Sale July 12 OCEAN CITY -The Colony Club of Ocean City will present its fourth annual antique and craft sale from 9 a.m. - 3 p.m. Saturday. . July 12, at the Music Pier, Boardwalk at Moorlyn Terrace. Nearly 100 antique dealers and craft artists from several states will participate. This year's sale is under the direction of Maribeth Neall, president. and Ren Flood and Jean Gilbert, co-chairman. All proceeds realized will go to the club's Scholarship and Social Service Fund. Last year Ocean City youth and social programs qualifying under the club's guidelines received approximately $7,500. Model RR On Display WILDWOOD - The Greater Wildwood Model Railroad Club, 135 W. Burk Ave., opens its facilities to the public this summer for the 17th year. The club, which started the season yesterday, holds open house 7; 30-9 p.m. each Tuesday throughout July and August. A nominal donation is asked to help defray operating expenses. It is requested that all visitors under the age of 12 be accompanied by a responsible adult.
