I If Catch Is Bountiful: Tasty Ways of Cooking Fish
By FLORENCE L.D. HEALL A friend of mine asked me if I had some fish recipes as her husband had had a good catch on the fishing trip that day. I will share with you the recipes I gave her. HADDOCK FILETS WITH CHEESE 1 pound filets haddock or flounder Vi cup margarine 4 cup minced onion 2 tablespoons flour 1 cup milk 3 oz. shredded Cheddar cheese 4 teaspoon salt 1/8 teaspoon pepper Paprika Roll the filet and fasten with toothpick; arrange on a 9 x 13 inch baking dish. In a saucepan, combine margarine and onion; cook until tender, add flour and cook until bubbly; add salt and milk; stir constantly until thickened. Add pepper and cheese, cook untir heated through. Pour sauce over the fish rolls, sprinkle with paprika and bake at 350# for 30 minutes. Serves 6. i BAKED STUFFED FLOUNDER 6 flounder filets Seafood dressing 1 tablespoon lemon juice 1 cup fine bread crumbs 4 cup melted butter Preheat oven to 375#. Grease shallow baking pan. Stuff each flounder filet with 4 tablespoons seafood dressing. Roll and secure with toothpicks. Place in baking dish.

Season with salt, pepper and lemon juice. Pour melted butter over fish. Bake at 375# for 25 minutes. SEAFOOD DRESSING 6 tablespons butter V4 cup celery, finely chopped 4 cup onion, finely chopped \'a cup gr. pepper, finely chopped >2 lb. shrimp, cooked and chopped l teaspoon parsley, chopped 1 teaspoon pimento chopped 4 teaspoon Worcestershire sauce 4 teaspoon seasoned salt 1/8 teaspoon cayenne papper 14 cup bread crumbs Melt butter, add vegetables, and saute until tender. Add remaining ingredients, except bread crumbs. Cook over lowheat for 10 minutes. Add this mixture to the bread crumbs. Serves 6. BAKED FISH FILETS IN SOUR CREAM 4 teaspoons butter 2 lbs fish filets (sole, flounder, etc.) 1 teaspoon salt Dash hot pepper sauce 1 tablespoon paprika ■ 4 cup sour cream V4 cup fine bread crumbs Grease 2-quart baking dish with butter, arrange fish in baking dish. Blend seasonings and cheese into sour cream, spread over fish. Top with bread crumbs. Dot with butter Bake uncovered at 350# for 30 minutes. Serve with lemon slices. FLOUNDER BONNE FEMME 3 tablespoons butter or margarine 2 tablespoons finely chopped onion 1 , lb fresh mushrooms 1-14 lbs flounder filet l taL.espoon chopped parsley Paprika 1 teaspoon flour 1 tablespoon half & half rah k Pepper to taste In a large skillet, melt 2 tablespoon butter and add onion Cook until transparent Put half the mushrooms in the skillet and saute. Sprinkle flounder filets with salt and pepper and roll into four loose bundles. Place fish in skillet with seam down, and top with the remaining mushrooms. Sprinkle with parsley and paprika. Bring the ingredients to a boil. Reduce heat, cover and cook over low heat for about 15-20 minutes. Blend flour into the remaining butter Remove fish to a warm platter and stir butter-flour mixture into pan juices. Add cream, heat without boiling, stirr-
