Considered a standard reference book used in the restaurant industry, this book guides through the purchasing, planning, preparation and serving of food to large groups. IT IS organized into menu categories covering everything from healthy soups and salads to vegetables and exotic pastas. All the recipes are presented in easy- to- read formats with tables showing how to adjust the recipes to yield from 50 to 500 or more portions. Other hints include simplified cooking techniques, standardized yields and portions and timetables for cooking meats, poultry, fish and steaming. A group of menu suggestions is provided for brunches, buffets, luncheons. and banquets to aid in your planning. Cooking for Crowds (641.57 W) by Merry White is for those wishing to serve international cuisine to a large group for a relatively low cost, TTiis is the perfect book to have in hand for planning easy-on-the-cook

The Church Kitchen <641.57 B) by Doris Box centers on American regional favorite and downhome recipes based on 50 servings. A sampling of the recipes include Louisiana Red Beans and Rice, Smothered Pork Chops, Corn Fritters, and Eggplant Parmesan. The Perfect Dinner Party Cookbook (641.568 D) By Ceil Dyer concentrates on recipes that can be prepared hours or even days ahead. This gem of a book is divided into six main sections: Seated Dinner Parties, Extra-Easy Dinner Parties, Card-Table Parties, Buffet Parties, Smorgasbord Parties, and Formal Dinner Parties. Each section provides menus and recipes for groups varying between 8 and 24. LASTLY, I would like to bring your attention to a professional book — Food Preparation for Hotels, Restaurants, and Cafeterias by Robert G. Haines, often used as a student text and adaptable for group cooking needs. The majority of the recipes are for 25 or 50 servings, including instructions for boning fish and chicken, utensils needed, etc. Enjoy!
